These grapes come from Seneca Lake vineyard allowing a long ripening season. Fermentation on the skins at higher temperatures and “punching down” 3 to 4 times a day, followed by extended skin maceration after fermentation, gives this wine a deep, rich color along with abundant tannins. The cooler Finger Lake climate allows this variety to develop wonderful raspberry, violet and cedar aromas. Barrel aging in American and French oak for 10 months gives this wine a deep structure and full mouth feel with rich tannins. A favorite of red wine drinkers, this goes great with steak and mushrooms or pasta tossed with fresh tomatoes, basil and Asiago cheese.

These grapes were harvested from our Seneca Lake Vineyards at the peak of maturity just before the rains started in early October of 2000. These vines are over 30 years old and produce small yields giving more intense flavor to the grapes. This Chardonnay was fermented in French and American Oak Barrels, underwent a partial ML fermentation and the yeast were stirred weekly for 6 months to build richness and complexity. The wine was aged for a total of 8 months before bottling. This wine shows vibrant tropical fruit aromas with subtle tasty oak flavors. It goes well with grilled swordfish or rosemary chicken and matched perfectly with Fettuccine in an Alfredo sauce with roasted red peppers.

Picked from the same vineyard block as our Semi Dry Riesling but 2 weeks later to allow more ripeness and flavor development, this wine displays the wonderful floral aromas and mineral flavors that Seneca Lake Rieslings are known for. This wine has more structure and elegance and goes well with a wide range of foods, but is especially well matched with spicy Thai or Chinese dishes. This is a wine that will age well for several years.

Perhaps the most challenging yet most rewarding wine to grow and make, this Pinot Noir is hand picked from vineyards on the East side of Seneca Lake. The grapes are cold soaked prior to a warm fermentation on the skins. Constant attention is paid to the temperature and the “punching down” of the fermenting grapes to derive the optimal color, flavor and tannins. Pressed very softly and gravity racked to French oak barrels, this Pinot Noir undergoes ML fermentation in the barrels and is only racked once. Gentle yeast stirring for several months builds depth to the wines finish. This wine shows ripe cherry and raspberry aromas with a hint of smoky oak. With a rich mouth feel and supple tannins make this wine match perfectly with Salmon (either grilled or poached) and also savory lamb dishes.

Picked from selected vines from our vineyards on the East Side of Seneca Lake, this wine displays wonderful aromas of peach, apricot and melon. Gentle pressing and cold fermentation at 48 degrees allows this wine to express ripe fruit flavors. Enjoy chilled on a picnic of at dinner with baked ham or grilled seafood.
