Bayou Teche Brewing

Bayou Teche Brewing Returning to America after a six year deployment in West Germany, our brewmaster dreamed of creating a beer that would pair with the Cajun cuisine he grew up eating. Living in Europe, he had learned to appreciate the regional foods and beers of many countries, and how they had evolved to complement each other. Taking up brewing beer at home, he taught himself to make several styles of these beers, fine-tuning recipes until he was satisfied that they complimented Cajun and Creole food. After returning to Arnaudville, he taught his brothers and collaborating they brewed commemorative batches of beer for their family’s holiday meals. Bayou Teche Brewing was founded on this simple dream – to craft beers that compliment the cuisine and lifestyle of Cajuns and Creoles. With that mission, the Knott brothers decided on St. Patrick’s Day in 2009 to convert a discarded rail road car into a farmhouse brewery. Years ago, when the French-speaking, agrarian residents of Acadiana needed to put up a barn or similar building they would throw a coup de main. Inviting friends and relatives over to help with the arduous task, everyone’s shared labor would be repaid with a large communal meal. Thanks to well-fed (and sometimes inebriated) volunteers and as a nod to the Cajun aesthetic and heritage, the tiny hand built brewery now resembles a traditional Acadian style home – complete with a tasting porch. Today, in that converted old rail car near the banks of the Bayou Teche, innovative ales are being crafted true to the brewers’ original intent – beers that compliment the unique foods and lifestyles of South Louisiana.

  Grenade
When they arrived in Acadiana, our French-speaking ancestors discovered the passion fruit growing here and named it grenade (pronounced grruh-nod). We still call it that today, the fruit’s juice has a refreshingly tropical, guava-like, sweet/tart flavor. Grenade is our wheat beer, which we brew to quench Acadiana’s warm weather thirsts. The ale is the color of a South Louisiana sun, and pours with the bright citrus flavor of passion fruit. It’s hot out. Find the shade of a large moss-drenched oak tree on a bayou near you, relax and enjoy a bottle. Welcome to beer drinkers’ paradise.
  LA-31 Bière Noire
We use specially roasted German malts and select American hops which provide our LA-31 Bière Noire a small bite of noble bitterness and a dry, French roasted coffee flavor. It goes great with grilled steaks, hamburgers, or sausage po-boys, any spicy blackened Cajun dish, or a dinner table surrounded by those you most cherish.
  LA-31 Bière Pâle
Using Belgian malts and American hops and yeast, LA-31 Bière Pâle is a distinct new style of beer. Traditionally brewed, we classify it as a Bière Pâle, or Louisiana Pale Ale. It is bronze colored with a biscuity malt center, herbal hop flavors and a gentle, mellow bitterness. This beer is crafted to enhance the unique cuisine and lifestyle of South Louisiana.
  LA-31 Boucanèe
LA-31 Boucanèe is our acknowledgment of the importance of the wild cherry tree to south Louisiana. Using cherry-wood smoked wheat we craft a surprisingly delicious and unique ale. A cold glass of Boucanèe enhances the taste of many local dishes, whether smoked or not. At our brewery, we enjoy pairing it with chicken and sausage gumbo, barbeque, sausage po-boys, and grilled hamburgers. We can no longer even look at a link of boudin without instinctively opening a cold bottle.
