Description: LA-31 Boucanèe is our acknowledgment of the importance of the wild cherry tree to south Louisiana. Using cherry-wood smoked wheat we craft a surprisingly delicious and unique ale. A cold glass of Boucanèe enhances the taste of many local dishes, whether smoked or not. At our brewery, we enjoy pairing it with chicken and sausage gumbo, barbeque, sausage po-boys, and grilled hamburgers. We can no longer even look at a link of boudin without instinctively opening a cold bottle.

Varietal Definition
Ale:
Ale is beer that is brewed using only top-fermenting yeasts, and is typically fermented at higher temperatures than lager beer (15–23°C, 60–75°F). At these temperatures, ale yeasts produce significant amounts of esters and other secondary flavours and aromas, often resembling those of apple, pear, pineapple, grass, hay, banana, plum or prune.
Rauchbier:
The origins of Rauchbier lies with breweries in the region of Franconia in northern Bavaria which traditionally dried the barley over fires fueled by beech trees from local forests. The resulting pungent malt imparted an assertively smoky aroma and flavor to the beer from which it was made. These smoked lagers generally feature a very malty framework on which the intensely smoky character will not become overbearing.
