Seven Hills wines are known for their balance: a trinity of fruit, acidity and tannin that make our red wines delicious upon release and a rewarding sensory experience with cellar age. Our focus is varietal red wine made from the appellations of Eastern Washington. We harvest from vineyards in the Columbia, Walla Walla and Red Mountain appellations, choosing growers whose commitment to quality matches our own. Winemaker Casey McClellan works with our growers throughout the year monitoring each stage of development in the vineyards as the seasons progress. Respecting the terroir of these sites, we choose to vineyard-designate wines from Klipsun and Seven Hills Vineyard; and blend selectively from other sites to create appellation-designated wines. In addition to our core red wine program we make an off-dry Riesling and a Pinot Gris from fruit sourced in the cooler appellations in Oregon. Fruity and aromatic, these wines are a delightful complement to the reds.

Cabernet Sauvignon, Columbia Valley
A medium-bodied red of deep color. By nose and mouth it shows black and red fruits, sweet spices, vanillin and red plum overtones. The diverse vineyard sites show in a pleasing range of flavors and accessible structure. Polished gentle tannins and a slight brightness make this an inviting mealtime choice.

Cabernet Sauvignon, Klipsun Vineyard
Sourced exclusively from Klipsun Vineyard in the highly-regarded Red Mountain AVA, the grapes were hand-picked and blended with 8% Merlot to lend softness. A powerful, intense Cabernet offering aromas of ripe red plum, piquant spices, cocoa and vanilla. A palate of bright red and black fruits trails into a warm, persistent finish. From one of America's outstanding vineyards, this wine will be enjoyable for many years to come.

Cabernet Sauvignon, Klipsun Vineyard, Columbia Valley
A powerful, intense Cabernet offering aromas of ripe red plum, clove, coffee, and vanilla. By mouth there is great depth and length of fruit, laid on substantial tannins, surrounded by spice, vanilla and mocha notes. A stellar vintage of restrained acidity, huge flavor and a very ageable structure.

Only one barrel of this100% Cabernet Sauvignon sourced from the old blocks of Seven Hills Vineyard is available. As with all our wines, the grapes were hand picked; 2004 was a warm season producing a generous Cabernet.

Cabernet Sauvignon, Seven Hills Vineyard
Cabernet Sauvignon 89%, Cabernet Franc 7%, Merlot 4%. Complex, layered Cabernet showing the depth of flavor that old vines offer. Rich red plum and blackberry are complemented by cocoa and licorice notes with hints of vanilla and pepper. Moderate acidity, an approachable texture, and a pleasing, lengthy warm finish support the sensory profile. A highly rated, very collectable bottling from one of the most well-regarded Northwest vineyards.

Cabernet Sauvignon, Seven Hills Vineyard, Walla Walla Valley
Bottled in late July 2004 after cellaring for 23 months in predominantly French barrels. Will benefit from medium to long-term aging, gaining additional integration and flavor development over two to four years. Historically these wines show well for a decade or more. A very collectable bottling from one of the most highly regarded Northwest vineyards.

Ciel du Cheval Vintage Red Wine, Red Mountain
The most evenly blended of our releases to date from the renowned Ciel du Cheval Vineyard, with Cabernet, Merlot, and Cabernet Franc contributing about equally to the blend, while including a higher percentage of Verdot. Shows soft red plum, pie cherry, rhubarb and pungent, sweet spices in the nose. The palate is of red fruits over moderate structure, a little tight, but with subdued tannins. 32% Cabernet Sauvignon, 29% Merlot, 26% Cabernet Franc, 13% Petit Verdot

MALBEC, WALLA WALLA VALLEY
Deep, purple-black color. Assertive scent of passion fruit and blueberry, with floral and spice notes. Medium weight body, with moderate tannin. Berry finish, slightly drying.

MERLOT, COLUMBIA VALLEY
We crafted this wine to drink earlier than our vineyard-designated releases, seeking softer tannins and very broad, full mid-palate flavors. Cabernet Franc adds softness and complexity, and a light note of violets. The aroma is of ripe black fruits surrounded by complex oak tones of spice and vanilla. There’s great balance on the palate, with a natural harmony between fruit and structure.

Merlot, Columbia Valley
Blended from several vineyards within the Columbia Valley. 2004 was another very warm vintage of dry, sun-filled days. Yields were below average. The grapes were hand-picked under ideal harvest weather. A Merlot base enhanced with Cabernet Franc.
We crafted this wine to drink earlier than our vineyard-designated releases, seeking seeking softer tannins and very broad, full flavors. Cabernet Franc adds softness and complexity, and a light note of violets. The aroma is of red plum and black rapsberry fruits surrounded by sweet oak tones of spice and vanilla.

Merlot, Seven Hills Vineyard
83% Merlot, 17% Cabernet Franc, sourced primarily from the esteemed old blocks of Seven Hills Vineyard. A ripe, food-friendly Merlot exhibitng a broad array of flavors and aromas - toffee, violets, herb and vanilla accent ripe red and black fruit, with generous depth and length.

Pentad, Walla Walla Valley
A Walla Walla Valley blend of five varietals: Cabernet Sauvignon (55%}, Merlot (13%}, Carmenere (6%}, Cabernet Franc (13%}, and Malbec (13%}, the 2003 Pentad is the most open at release of the three vintages to date. It offeres and inviting accessibility, accenting warm, ripe tones and expansive fruit characters. Red and blackcurrant dominate the nose, interwoven with tropical passionfruit and hints of blueberry. Sweet baking spice and light notes of fennel and licorice round out the aroma. Red raspberry, vanillin, and light smoky notes by mouth. The structure is broad, balancesd and elegant, yet very persistent and generous. Overall, a beautiful representation of the nature of this very warm vintage year.

Pentad, Walla Walla Valley, Vintage Red Wine
We proudly release the second vintage of PENTAD Vintage Red Wine, a Walla Walla Valley blend of five varietals: Cabernet Sauvignon, Merlot, Carmenere, Petit Verdot and Malbec. This wine follows the very successful 2001 release, which established a new level in our expression of Walla Walla Valley winemaking, and is the essence of many years of craftsmanship. Our intention with Pentad is change through time, shaping expansive flavor, complexity, and creation of an evolving sensory experience. Every care has been taken in the production of Pentad, to provide a transcendent wine that is both enjoyable and collectible.

PINOT GRIS, OREGON
100% hand-picked Pinot Gris, from the Umpqua appellation of Oregon. The cool, marine-influenced microclimate of the Umpqua creates a blend of ripe flavors and balanced acidity. Ideal harvest conditions from an older, low yield site. Apt to age well for up to 2 years, maturing in the next 6 to 9 months. A perfect match with seafoods of all types, and refreshing on its own as well.

PLANING MILL, RED COLUMBIA VALLEY
We crafted this wine to drink earlier than our vineyard-designated releases, seeking softer tannins and very broad, full mid-palate flavors. Cabernet Franc adds softness and complexity, and a light violet note. Syrah adds body, structure, and black cherry and game flavors. Merlot fills out the middle palate. The ripe fruit characters are surrounded by oak tones of baking spice and vanilla. There’s great balance, with a natural harmony between fruit and structure.

PLANING MILL, RED COLUMBIA VALLEY, RED TABLE WINE
Blended from multiple vineyards within the Columbia Valley. 2003 was a very warm vintage of dry, sun-drenched days. Yields were near average. As with all our wines, the grapes were hand-picked; harvest weather was perfect. A blend of Syrah, Merlot and Cabernet Franc from well-drained soils. Bottled in April, 2005 after aging in our cellars for 18 months in a mix of American and European barrels. This is an accessible, enjoyable wine styled to be drunk young

100 % Riesling, harvested from an older, warmer site and a more Northern cool climate site. 2005 gave us normal yields and great harvest weather. Brilliant, light straw color. Graceful, balanced Riesling fermented at cool temperatures to maximize varietal aromas and flavors. Shows abundant ripe apple and floral notes, with undercurrents of mineral. Follows our traditional style of a light sweetness with a clean, crisp finish. While it can be held for up to 2 years to gain bottle character, this is a white wine made to be enjoyed young. A very versatile wine for a variety of occasions.

Bottled in July 2005 after aging in our cellars for 23 months in primarily French oak, about 30% new. Will benefit from medium to longer-term cellaring, gaining additional integration and flavour development over 12-36 months.

Syrah, Walla Walla Valley
Essentially a single-vineyard, 100% Syrah from Dwelley Vineyard, a mid-altitude, south-facing slope on very deep silt-loam soils. 2004 was amongst the warmest of vintages, and as with all our wines, the grapes were hand-picked; harvest weather was dry and hot. The aroma is of oine, gamey characters and black cherry. Smoky Syrah notes dominate the palate, with ripe black fruits, pepper and vanilla accents. There's a gentle balance with softness and polish encouraging early drinking. Bottled in April, 2006 after aging in out cellars for 18 months in primarily French oak (close to 30% new}. Will benefit from medium-term cellaring, gaining additional integration and flavour development over 12-18 months.

Tempranillo
A very rare bottling of a native Spanish varietal, Tempranillo, which has only recently been grown in Washington State. The vines are located on a south-facing gravelly slope, near Mattawa. The fruit was hand-picked under ideal weather conditions. A medium bodied, ripe, accessible style. Shows cherry fruit, with exotic hints of smoke, savory herb and rose-petal notes. Vanillin and subtle spice add complexity. Sweet fruit by mouth, with a rich finish, with mild dry tannins. Bottled in March 2006 after aging at our cellars for 16 months in primarily American barrels. Will benefit from near to medium-term cellaring, gaining additional integration and flavor development over 6-18 months.

Viognier, Columbia Valley
Rich, yellow gold color. Orange peel and peach aromas waft from the glass, accented with spicy toasty notes. Charming flavors of orange and peach, supported by a very ripe, soft structure and complex notes from barrel fermentation in French oaks.
