Cabernet Claret
We have pulled this people-pleasing wine from the tasting room list at the winery to devote the remaining cases to distribution. Soooo...get out to your local store a pick up a bottle!!! Grill something, and drink up! CHEERS! We call this wine our wine for Tex-Mex and Barbeque. It is a well-balanced sweet red wine. It is made of Cabernet Sauvignon and Cabernet Franc that were both aged in French oak barrels for 10 months. We lightened the wine in both color and structure with the addition of Sauvignon Blanc. The residual sugar level is 3.0%. This wine is a perfect pairing for spicy, rich foods, and it also goes well with chocolate desserts. Serve at room temperature or slightly chilled.

Cabernet Sauvignon
ur latest release of Cabernet Sauvignon is 88% Cabernet Sauvignon and 12% Cabernet Franc. This combination brings us bold tannins with wonderful bright fruit fla vors and spice. We aged this wine in 75% French oak and 25% American oak barrels for 9 months. With aromas of caramel, cherry and vanilla, bold tannins and spice that scream for a steak or lamb, who wouldnít love this wine?

Cabernet Sauvignon 2000
Our newest Cabernet Sauvignon vintage to be released is a wonderful continuation of this Texas estate-grown varietal. Cabernet Franc (15%) and Merlot (5%) round out this Cabernet Sauvignon with wonderful spices. With 8 days of skin contact and 10 months in French Oak barrels this wine presents cherries and peppers with lots of toasty French oak. Enjoy it with grilled beef with comino or simply with chocolate!

Chardonnay
The Chardonnay and Semillon that go into our lastest Chardonnay vintage were fermented inside of French oak barrels then aged for 10 months for a nice toasted oak flavor infusion that does not overpower the fruit flavors of the grape. The wine sat sur lees in the barrels which lends a wonderfully creamy mouth-feel. Tropical fruit, melon, apple, hazelnut, butter, crisp acidity, and a long finish mark this wine. We love this wine with grilled fish and chicken, creamy pasta, and cheesecake.

Chardonnay Dulce
Chardonnay Dulce is the product of a bountiful harvest and necessity. Our 2001 harvest produced so much Chardonnay that we filled our barrels with barrel fermented Chardonnay, and still had 1200 gallons of juice. What could we do? We fermented it in stainless steel to preserve the wonderful fruit flavors, and then added just a touch of sugar (1.4%) to balance it. It is a wonderful wine for sipping, and a great accompaniment to very spicy foods.

Estrella Blanca 2001
Our second Proprietary blend to be released to date is Estrella Blance (White Star - like the white star in the Texas Flag), a blend of 51% Semillon, 26% Sauvignon Blanc, 17% Chardonnay, 6% Muscat. The blend was aged in new and three-year old French Oak barrels, sur lees, for 7 months. Estrella Blanca is filled with toasty French Oak and luscious fruit aromas, has hints of citrus, pear, pineapple, and nutmeg on the palate, and ends with a creamy oak finish. The flavors of this wine are a celebration of what Texas wines have to offer!

Holiday Blush NV
This is our annual Holiday Blush released in November to celebrate the holiday season. This year the Holiday Blush is a blend of 50% Merlot Rose, 30% Riesling, and 20% Merlot Nouveau. The residual sugar is 4.2%. It has wonderful, natural flavors of apple, and cherry, floral aromas of orange blossoms, a lightly sweet finish, with beautiful holiday color. It is good served either chilled, or warmed slightly with a stick of cinnamon during the holiday season. This wine was released on November 6.

Merlot
The Merlot 2002 is a bold blend of 80% Merlot, 13% Cabernet Franc, 6.5% Cabernet Sauvignon, 0.5% Alicante Bouschet. It spent 13 days on the skins extracting good tannins and color. The Merlot was barrel aged in French oak for 10 months, with 6% aged in new American oak for 3 months. The result is a well-oaked wine with dark dry fruit flavors with hints of tobacco, cherry and raspberry. It smells like camping.

Merlot
One of our three Collector’s Edition Wines, the Merlot 2003 is a highly extracted Merlot with dark color and intense hue. The aromas express dark cherries, and French oak. The entry is smooth, with medium to full weight and chewy tannins in the middle and end. The finish is dry with fruit and oak flavors lingering. Only 70 cases of this vintage were bottled, due to a late freeze in 2003.

Merlot Nouveau
This wine is young and fruity, with incredible flavors of cherry, peach, papaya, lemon zest, vanilla, and walnuts. We picked Merlot on August 12th, and put the entire grape clusters in a tank, then filled the tank with carbon dioxide. Under these conditions, an enzyme is activated inside of the grape and it ferments itself, bleaching out the color from the skins and creating fantastic fruit flavors inside the berry. The technical name for this process is carbonic maceration, and originated in the Beaujolais region of France. After 8 days, we pressed the wine and fermented it to dryness in stainless steel. Then we aged the Merlot Nouveau in a stainless steel tank for 2 months until bottling it on October 18.
|
Rose of Merlot
Our second release of Rosé Merlot has wonderful deep fruit flavors of cherries, currants, berries, with hints of vanilla and spice. It was held with its skins for 48 hours to produce a beautiful rosé color, then fermented and aged in stainless steel tanks for 4 months before bottling. This wine is not cold-stable, which means that it has tiny crystals of tartaric acid in the bottle. The crystals do not affect the flavor, or enjoyment, of the wine. Because of this fault, we are offering the Rosé of Merlot 2005 at an incredibly discounted price, and it can only be found in our tasting room or in our online shopping cart. Our loss is your gain!

Rosé Wine 2003
Our first dry Cabernet Sauvignon Rose Wine has notes of wild strawberries, grapefruit, and green peppercorns. The Cabernet Sauvignon grapes were held inside of the press for 18 hours in order to create the wonderful Rose color of this wine. Fermented and aged for 3 months in stainless steel tanks it is dry and fruity with a very rich mouth feel. We added 7.8% Cabernet Franc and 6.7% Merlot to round out its edges. Enjoy this wine chilled with smoked trout, a variety of appetizers, and vegetable gratins.
|
Sauvignon Blanc
The latest release of our legendary Sauvignon Blanc is a blend of 9% Johannisberg Riesling and 91% Sauvignon Blanc. Fermented and aged in stainless steel tanks until being bottled there is nothing but the fruit flavors of Sauvignon Blanc. This vintage has wonderful grapefruit aromas, flavors of pear and vanilla with mouth watering acidity. The finish is long and lingering reminiscent of a spring day in the Texas Hill Country.

Semillon Dulce
|
Semillon Reserve Non-Vintage
One of our Collector’s Edition Wines, this Semillon is the product of three separate vintages. The torrential rains of 2002, followed by the freeze of 2003, drastically reduced the amount of Semillon that we produced each year. The single barrel of Semillon produced in 2002 was aged for 12 months in new oak and then transferred to a neutral barrel for two years. In 2003, we also got a single barrel of Semillon, which also went into a new barrel for 12 months, followed by a year in a neutral barrel. Finally, we actually got a full crop of Semillon in 2004! We barrel fermented this Semillon and then aged it in a combination of French oak barrels of various ages for 6 months, sur lees. The Semillon underwent partial malolactic fermentation. We then blended the three vintages together, and bottled the Semillon Reserve in May 2005. We love this elegant white wine, and we hope you will too!

Zinfandel
One of our three Collector’s Edition Wines, the Zinfandel is a wonderfully spicy and fruit-filled wine. The aromas are full of intense black pepper, dark fruit, and a blend of American and French oak. The entry is smooth, with medium weight and supple tannins. The finish lingers, with accents of black pepper, fruit and oak. This wine is a favorite among all of our tasting room staff. 150 cases were bottled.
