Description:
One of our Collector’s Edition Wines, this Semillon is the product of three separate vintages. The torrential rains of 2002, followed by the freeze of 2003, drastically reduced the amount of Semillon that we produced each year. The single barrel of Semillon produced in 2002 was aged for 12 months in new oak and then transferred to a neutral barrel for two years. In 2003, we also got a single barrel of Semillon, which also went into a new barrel for 12 months, followed by a year in a neutral barrel. Finally, we actually got a full crop of Semillon in 2004! We barrel fermented this Semillon and then aged it in a combination of French oak barrels of various ages for 6 months, sur lees. The Semillon underwent partial malolactic fermentation. We then blended the three vintages together, and bottled the Semillon Reserve in May 2005. We love this elegant white wine, and we hope you will too!

Varietal Definition
Sémillon:
A thin skinned grape producing wines of high extract and flavour but soft acidity. In France it combines with Sauvignon Blanc to make the white wines of Bordeaux, most notably the sweet dessert wines of Sauternes and Barsac. Its thin skin leaves it susceptible to the fungus botrytis* the much sought after 'noble rot' in these sweet wine regions. As a varietal it has fared best in Australia, notably the Hunter Valley, where it produces well-rounded wines with lots of tropical fruits and honeyed tones. Here too it is blended with Chardonnay and oak aged to give an added dimension.
