Tarsitano Winery Sitting high on top of the Hatches Corners Ridge, Tarsitano Winery interprets traditional wines in new ways by stressing the beauty of its natural surroundings. We have made a several exciting new additions to the winery. A brick pathway leads to our new French door entrance. Ron Kister, C&Z Classic Wood Furnaces,installed a gas log fireplace that keeps the winery nice and toasty during these cold days. We commissioned a couple new cherry and oak tables crafted by edgewood high school students. We extended the bar to include a new cafe. Every day Menu items include bruchetta,cheese plates, gourmet pizzas and veggie burgers. Reservations can be made for special dinners for 2 and up. We will create a menu just for you on a per person basis. Cross Country Ski Trails have been made linking Tarsitano Winery to Markko's Winery.   Auxerrios
French vinifera white grape variety originally grown in the northeast Moselle and Alsace regions of France. This everyday wine produces a mildly acidic light bodied wine with a floral boquet and hint of spice. Tarsitano Winery Auxerrois is presented in a pinot blanc style. This means that the wine has been allowed to complete malo latic fermentation in an old french oak barrel giving it a butter soft middle and light spice finnish.
  Bear Creek
New hybrid varietals out of cornell givning big bold fruit, deep rich red colors, meaty middle tones and a melange pepper spice finish. This wine is wonderful accompaniment to any meat, pasta and poultry.
  Cabernet Franc
Recently discovered to be one of the parent grape varieties that gave rise to the Cabernet Sauvignon cultivar. Mainly found in cooler, damper climatic conditions than its offspring. Shows moderately vigorous growth and earlier wood and crop maturation than Cabernet Sauvign. In N.E Italy the variety is known as the Bordo winegrape. French Bordeaux wines commonly contain a blend of both Cabernet varietal wines. Tarsitano Winery Cabernet Franc is a berry driven dry red wine with a wonderful soft chocolate finnish.
  Cabernet Sauvignon
A "noble" grape, in Italy it is sometimes referred to as Uva Francese. Although recorded as present in the Bordeaux region since at least the 17th century, Recent research has unexpectedly discovered that the original parents of this variety were Sauvignon Blanc and Cabernet Franc, an astounding reversal of previous assumptions. A "hardy" grape, it helps make wines of classic breed, intensity and complexity that often need to bottle-age for at least 5-10 years in order to reach peak flavor condition. Tarsitano Winery Cabernet Sauvignon has wonderful berries, deep middles and soft tannins.
  Chardonnay
This variety is the best-known white-wine grape grown in France and direct descendants of the original ancestral Pinot cepage x Gouais Blanc, ancient crossing. The wine made from it is often aged in small oak barrels to produce strong flavors and aromas. Possessing a fruity character (e.g: Apple, lemon, citrus) subsequent barrel-influenced flavors include "oak", "vanilla", and malolactic fermentation imparted "creamy- buttery" components. Quite cold-hardy although early to bud and susceptible to bunch rots, yet retains fruit crispness in warmer growing years.   Classico
A proprietors blend of mainly seyval blanc with a small portion of chardonnay to add more depth and butter. This blend offers an affordable chardonnay style wine highlighting the seyval citrus characteristics and chardonnay buttery middles.
  Inaugural
A proprietors blend of mainly seyval blanc finished wine with a small portion of gewürztraminer grape juice to capture their fruity and spicy characteristic. This blend offers a higher quality sweet wine that reminisce the grape.
  Lemberger
Once thought to be a Gamay type clone variety but now regarded as a separate variety grown in Austria. New evidence from DNA profiling possibly indicates a parentage of Gouais Blanc and an unknown variety (possibly Blauer Zierfandler). Used to produce light bodied dry, fruity red wines. This grape has many synonym names including Blue Frank, Gamé where grown in Bulgaria and also grown in Germany under the name Limberger. Tarsitano Winery Lemberger is very similar to Pinot Noir with a distinct fruit difference. A wonderful light body red with crisp berries and a soft oak finish.
  Pinot Gris
(Pronounced "pee-nOH gree-zOH"). Popular synonym name of the Pinot Gris where grown in Italy and the Alsace region of France. The purple grape variety can create crisp, dry wines with good acid "bite" where grown in cool climate regions such as the Alto-Adige/Trentino regions of N. Italy. Pinot Gris can be picked early and pressed whole berry to maximize it crisp character or let hang on good years for a more fruity and softer version. Tarsitano Winery Pinot Gris is fruit driven, crisp and clean off dry white.
  Pinot Noir
The premier Pinot grape "cépage" of the Burgundy region of France. Recently recognized that the progenitors of the cépage are most likely Traminer and a clonal selection of the ancient Pinot Meunier variety. It appears that the three color variations of Pinot Blanc, Pinot Gris and Pinot Noir come from the same genotype. Cherished aromas and flavors often detected in varietal wines include cherry, mint, raspberry, truffles and the ubiquitous gamey odor in new wines often referred to as "animalé" by the french winemaker. Tarsitano Winery Pinot Noir has elegant berries deep middles and subtle chocolate and vanilla undertones.
  Riesling
A flowery, fruity dry wine with high acid, the german "Kabinett" version or a semi-dry style with some residual sugar similar to the german "Spätlese" version. If infected with appropriate amounts of "botrytis", it can make outstanding late-harvest wines (Auslese). Lake Erie can produce excellent dry versions in the Mosel and Alsation styles in addition to consistent freezing temperature extracted juice made into "ice-wine".
  Seyval
Technical name Seyve Villard 5-276. The pedigree parents are listed as Seibel 5656 x Seibel 4986. Is a french-american hybrid grape that can be used to make high quality white wines of various styles. Crisp, fruity dry versions have sometimes been likened to French "Chablis" in aroma and taste. Wine intensity tends to be perceived as "thin", consequently either malolactic or barrel fermentation followed by oak ageing is recommended to enhance quality. Tarsitano Winery Seyval has wonderful citrus tones, crisp clean acids and a refreshing finnish.
