Harvest Spirits Farm Distillery Harvest Spirits is located at Golden Harvest farm, in Valatie, NY. Located on a family apple farm in the fertile Hudson Valley, we benefit by having all of our ingredients grown steps from our doorstep, creating a true estate bottled vodka. Our third-generation apple farm benefits by having a new market for our cider apples and increased traffic to our retail farm store. Our small distillery is a very modern work of art. Though it can only distill 100 gallons at a time, it is flexible and precise enough to create some of the country's very best vodka. We focus primarily on vodka, and our distilling equipment can produce virtually any kind of liquor, from gin and whiskey to exotics like cachaca, agave spirits and medicinal bitters. We invite you to come in for a tour and taste some of our latest creations.

  Black Raspberry Core Vodka
Fresh, home-grown black raspberries macerated in Core Vodka, then redistilled in the French "framboise" style. A trace of black raspberry juice is added for a magnificent violet color. Profound aromas and dry flavor of juicy black raspberries.
  Core Vodka
Award-winning distinctive vodka made from our own apples. A bright, floral nose leads to a long, clean finish. Superb in cocktails or simply by itself. Distilled three times from hard cider and minimally filtered to retain its true apple character.
  Hudson Valley Apple Brandy
Made from McIntosh apples, fermented on the skins for extra flavor. Double distilled and unaged for a rich apple finish.
  Hudson Valley Grappa
Made from the left over grape pressings of our local winery, Hudson Chatham Winery. A blend of Bacco Noir and Seval Blanc grapes are made into a crude wine and distilled twice. An assertive mid-palate eases to a warm finish of Thompson raisins and toffee. Pefect after a heavy meal.
  Hudson Valley Pear Brandy
Made from Bartlett Pears grown by Fix Brothers Orchards in Hudson, NY. Whole fruit fermented on the skins and distilled to retain the fresh pear flavors. Unaged and minimally filtered, this dry spirit is based on the French Poire Williams brandy.
  PeachJack Brandy
Our double-barrel aged PeachJack Brandy is made from fresh picked peaches, pitted by hand and soaked in our Cornelius Applejack, then strained and put back in the barrel. PeachJack has a mellow sweetness with rich flavors of spice and oak. A true fruit spirit. No sugar added. Some natural fruit sediment may occur.
  Rare Pear Brandy
Made by crushing ripe, locally-grown pears into a pureƩ which is fermented, skins and all. We then double distill the fruit mash two times with minimal rectification. Aged for 2 years in new charred American oak barrels. Dry pear skin aromas with vanilla and toasted oak finish. Devine.
