Description: The annual release of Cabernet Sauvignon from Bob and Barbara Finley’s Ironbird Vineyard is always greatly anticipated. Their tiny vineyard in Southern Oregon’s Applegate Valley is Oregon Tilth Certified which means that they have used no artificial materials in their farming practices. The area boasts a rich native habitat – so the good bugs have not been wiped out by insecticides and are busy dining on the critters that would destroy our prized fruit. The 2003 vintage in Applegate Valley was long, with the summer sun hidden by smoke from the largest wildfires in Oregon’s recent history. The fruit arrived at the winery in November and had the sort of great blackberry flavors and balanced acidity – so the aging potential looks great. 92 cases produced.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
