Description: Rum is produced in many different ways but we believe the best way is through small batches with quality ingredients, be it molasses or sugar cane syrup. If any additional ingredients are added, such as spices or other flavors, they should be natural and as local as possible. It all starts by selecting the right kind of molasses for the style of rum being made, be it light, gold or dark. Fermentation and yeast selection, very familiar to brewers, are critical to achieve a desired flavor profile, especially for dark rums. Finally, comes the distillation process which will take place in our 300 liter pot still. Our white rum will be available first along with interesting spiced rum derived from the trees on our property. These rums will be followed by our gold and aged rums which will require additional time to mature in our oak barrels. In addition, expect to see seasonal varieties such as a Christmas Rum for the holiday season. As former local brewers, we see no limit in what products we may discover through different blends of molasses, botanical infusions and aging techniques. Furthermore, the possibility of collaborating with local breweries and wineries opens the door to even more ideas, such as a rum barreled stout or Italian grappa. Rum has a fascinating past and we plan to give it an interesting future.
