Production of our Agave Gin begins with Fair Trade, Colorado Department of Agriculture Certified 100% Organic Raw Blue Agave fermented in small 55 gallon barrels. Each batch is then distilled in custom copper stills hand-built in Colorado. A Gin basket holding a special blend of hand-picked Colorado Juniper berries and other herbs and botanicals is attached to the top of the distillation column to allow the alcohol vapors to pass through and pick up the intensely flavorful Gin you hold in your hand now. Our Agave Gin is then left to rest in newly charred and toasted Brand New North American White Oak barrels for 1 month, imbuing a hint of oak and vanilla notes. Be warned however, this Jester is no joke.

Varietal Definition
Gin:
Gin is a spirit flavoured with juniper berries. Distilled gin is made by redistilling white grain spirit and raw cane sugar which has been flavoured with juniper berries. Compound gin is made by flavouring neutral grain spirit with juniper berries without redistilling and can be considered a flavoured vodka.
