Description: Inspired by road trips to the Baja peninsula of Mexico, Midnight Caye is our idea of a place rich with Baja California surf culture and roadside fish taco stands at which some of the most obscure but amazing tequilas can be found. The Midnight Caye 100% Blue Agave spirit pays homage to this lifestyle. Made only from organic mature Agave plants grown in fertile volcanic soil, our Agave spirits are distilled in traditional small batches. We offer two styles of Midnight Caye: “Silver” which embraces the Blue Agave in its purest form from the still straight to the bottle and “Rested” in which the spirit is allowed to mellow in French Oak barrels for some time. Enjoy the “Silver” neat or in your favorite margarita. Take your time with the “Well Rested”; sip it neat and enjoy the complex smoky flavors. We absolutely CANNOT call Midnight Caye a “Tequila”. The Tequila designation can only be given to Blue Agave spirits made in the Jalisco region of Mexico. We never use carbon filtering, we don’t believe in removing flavor from our spirits.

Tequila:
Tequila is a Blue Agave-based spirit made primarily in the area surrounding the city of Tequila, 65 kilometres (40 mi) northwest of Guadalajara, and in the highlands (Los Altos) of the western Mexican state of Jalisco. Mexican laws state that tequila can be produced only in the state of Jalisco and limited regions in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas.[2] Mexico has claimed the exclusive international right to the word "tequila", threatening legal actions against manufacturers in other countries. Tequila is most often made at a 38–40% alcohol content (76–80 proof), but can be produced between 35–55% alcohol content (70–110 proof).[3] Though most tequilas are 80 proof, many distillers will distill to 100 proof and then dilute it with water to reduce its harshness. Some of the more well respected brands distill the alcohol to 80 proof without using additional water as a diluter.
