Description: Our blueberry wine is made using over one pound of fruit per bottle. Our fresh from Florida Blueberries are frozen then thawed (this breaks down the berry's cell structure and helps release the juice, color and antioxidants). The berries are then crushed and put into primary fermenters. Unlike grapes which have sugars and acids in the right proportions for winemaking when harvested, blueberries are much higher in acid (almost double) and much lower in sugar (about half). For the finished wine to be balanced, water must be added during fermentation to cut the high natural acidity. Sugar must also be added to augment the lower natural sugars and, in turn, yield a wine with the desired alcohol of 12 % by volume. At this alcohol level, the fruit flavors are accentuated and there is no perception of alcohol "warmth". The berries are fermented on the skins in order to maximize extraction of color, flavor, and antioxidants. Once fermentation is complete, about 7-10 days, the skins are removed and the wine is pressed out using a water membrane press. The wine is racked off of the lees (solids) and placed into a stainless steel tank. After several rounds of racking and filtering, the wine is ready for bottling. Sugar is then added a second time, just prior to bottling, in order to achieve the precise sugar/acid balance.
