Description: This is our second vintage of this wine and we are quite pleased with the results. This new venture of Andy Beckstoffe—in Lake County—was selected for its similarity to the best Cabernet growing sites in Napa Valley. At 2000 feet of elevation with volcanic soil heavily laden with obsidian, it is an exceptional site. Predominately Cabernet Sauvignon, the addition of small amounts of Cab Franc and Malbec give this wine added depth and character. Black cherry, black currant, and earth dominate this dark flavored Cab. Light oak on the nose, dark chocolate, dusty and bittersweet. For drinking now, decant this wine for an hour or more. Balanced, well structured with acidity and tannins to insure that -with proper cellaring- this wine will continue to improve for five to eight years.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
