Description: In some seasons, our Riesling grapes are infected with Botrytis, the ‘Noble Rot’ that concentrates the juice in late-harvested berries and imparts to the wines made from them beguiling aromas of citrus blossoms, honeysuckle, green apples, nuts and spice, with deliciously nutty, honeyed flavors. Superbly balanced between sweetness and acidity, our Late Harvest Riesling is delicious to sip by itself or with fresh fruit and cheese, and also shines with spicy Asian cuisines.

Varietal Definition
Riesling:
On the sweeter end of the spectrum, some of the best dessert wines should give thanks to the Riesling varietal. Riesling is known for its complementary nature of combining balanced acidity with sugar. Rieslings are made dry to sweet, but it is the sweet style Riesling that brought about its popularity in the United States. With the rise of spicy sauces, marinades and dips to flavor our meal, Riesling plays a part in taking off the edge of the heat. Riesling is known for a number of signature characteristics: floral, citrus and pear. Riesling has peaked in California with 11,000 acres planted. I used to live in Germany in the Mosel Valley for 3 years in the early 80's and came to love their riesling weins. About 3 months ago quite by accident, I found Covey's Late Harvest and to be honest, it has become my favorite over the available German rieslings. The Covey Late Harvest is nothing less than fantastic. It's one of those rare wines that can cause smell and taste to bring back memories. You can't say that about many wines indeed.
