Description:
Our ‘Salus’ Cabernet Sauvignon showcases the softer side of our estate vineyard, and is produced mainly from fruit from our newest plantings. These new selections produce grapes with soft tannins, ample depth and body. The grapes have fully ripened and display the distinguished quality of “Rutherford dust.” The 2002 vintage shows aromas of blueberries, blackberries and rose petals. The palate explodes with deep-stone fruit characters of plum and black cherry. The balanced finish lingers with flavors of chocolate and vanilla, and a nice accent of toasty oak. Tannins are mouth-filling, yet smooth and supple. As this Cabernet Sauvignon matures, the vivacity of its youth will continue to open and become more expressive in the bottle. This wine will age beautifully for 15+ years. Enjoy!

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
