Description: Andrew Hoxsey, Managing Partner of Napa Wine Company has dipped into his private cellar to produce a extremely limited production of 2000 Pelissa Cabernet Sauvignon. Only one barrel was made. The grapes used were designated for the Georges De Latour Reserve Wines produced by Beaulieu. There are only 13 cases left of this this Single Vineyard, 100% Oakville Estate Cabernet. Truly an outstanding single vineyard representation of what an Oakville Cab can be like! We, opened a bottle June 14th, before noon with fresh palates. We started in the glass but realized it needed to be decanted. Here is what we found. Earthiness, black cherry, coffee and a hint of fennel. As the wine opened up we noted a slight herbaciousness of tarragon with dark chocolate, raspberry aromas and a very light licorice essence in the long and silky finish. Drink now through 2012! Truly a complex layered wine!

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
