Cabot Vineyards We love creating wines in this beautiful, wilderness area of California. Cabot Vineyards has the northernmost vineyards and winery in California. We are surrounded by National Forest and a scenic river which makes our location ideal. At our family-run winery we make wines as unique as the place they come from. With attention to detail, we allow the wine to display the pure characteristics of place and variety. We are a very small production winery which enables us to control quality in every step of the process.   Confluence
The 2004 Confluence is a traditional blend which combines the darkness, power, and structure of Cabernet Sauvignon and balances it with the lush,red-fruited nature of Merlot from our meticulously tended, estate vineyards. All lots were kept separate until bottling in order to craft the finest blend possible. The low yields in 2004 led to early ripening and resulted in ripe, concentrated flavors, retaining crucial acidity which make this blend such a great food companion. Aromas of fresh ground coffee, baking spices, black cherry, and currant lead the way into a full palette of dark cherry, cassis, olive, ending with bright acidity, firm structure, and ripe tannins. This is a young Bordeaux-style blend will continue to open up in the glass and will age effortlessly for ten or more years.
  Humboldt County Syrah
This 2004 Humboldt County Syrah is a single-block selection which was picked on October 14th. Cold fruit was destemmed into small one-tonfermenters and punched down three times a day until the wine achieved dryness. A variety of different strains of yeast were employed in order to attain as much complexity as possible. The wine was pressed and hand-bucketed into 2-year-old Rouseau, French oak barrels. The wine remained on the lees until the following spring when it was gently racked and a small amount of new Hungarian oak was utilized to finish the wine. After two years of barrel age, the wine was bottled unfined and unfiltered -- as are all of our efforts. Notes of fresh ground coffee, kirsch, mulberry, dark red cherry, game, and sassafras lead into a spicy, dark red-fruited, lush mid-palette, with a smooth texture, and ripe tannins. This wine is rich and full flavored, and shows the spicy, leathery, gamy qualities that make Syrah such an intriguing varietal.
  Kimberly’s Syrah
The components of this year’s Kimberly’s Syrah were blended to create a wine that was inspired by the fine wines of the Northern Rhone region Cote Rotie. Half of the blend is from a block in our vineyard that consistently produces chunky blueberry flavors. This lot was co-fermented with 5% Viognier in order to lift the aromatics and carry the finish. The other 50% was from a block which displayed great purity and concentrated red fruit, which made for a perfect companion to the darker-fruited, Viognier-infused selection. Each lot spent two years on a combination of French, Mercury and Rouseau barrels as well as a small amount of new Hungarian oak. This wine displays a beautiful magenta/purple color which is dark and viscous. The complex nose displays an incredible floral bouquet of violets and orange blossoms, along with blue and red fruits, fresh roasted coffee, and baking spices. Flavors of blueberry, boysenberry, black raspberry, andcranberry are concentrated and pure with notes of fresh roasted coffee on the finish; this wine has a round, balanced mouth feel with smooth, rich tannins.
  Reed’s Syrah
This is our first release of this particular designation. Named after our son, the 2004 Reed’s Syrah has distinctive character. Its dense red fruit and spice is reminiscent of fine Grenache. We selected the two barrels which best exemplified these special qualities. The color is beautiful deep, electric, garnet red. The seductive nose on this Syrah displays ripe boysenberry, kirsh, and white pepper. Red-fruitedflavors of dense black raspberry, pomegranate, cranberry and mulberry on the mid-palette are pure and well balanced with a long finish of ground coffee and spices. This single block, two-barrel selection, is firm and has a nice grip from substantial tannins which add structure and richness to this amazingly distinctive wine.
  Tributary Zinfandel
The 2004 Tributary Zinfandel comes from our original, dry-farmed, head-pruned vineyard. Due to a small fruit set in spring, we only received 2 1/2 tons per acre, which led to a very intense, concentrated wine. The fruit ripened easily and the resulting wine retained fresh, fruit flavors, along with noticeable peppery spice. We decided to add a 15% addition of Syrah, which lends color and complexity to the blend. This Zin has a dark ruby color with aromas of ripe red fruits, cedar and spice. The palette is classic Zin with its pure bright, ripe, red raspberry, strawberry, leather, and hints of cracked pepper. Aged on 3-year-old French and eastern European oak for two years, the slight vanillin and spice adds to the long fruity finish.
