The Ivory Tower Brewery (ITB) is situated on the campus of Appalachian State University in the Broyhill Center in historic Boone, North Carolina.
ITB is a non-profit, educational brewery that is completely faculty and student run and managed. The brewery will produce and distribute a number of specialized and seasonal beers for the purpose of educating students in the science and business of brewing. As part of the Fermentation Sciences Program, courses are being offered on the science, business, and production of craft beverages
