Vino Salida Wine Cellars Vino Salida Wine Cellars is a small artisan winery in the Heart of the Colorado Rocky Mountains. Nestled in the Upper Arkansas River Valley, we bring in high quality grapes from the finest growers in Palisade and local Salida Mountain Honey to create handcrafted batches of tasty vino and mead. Every year we hold our Annual Grape Stomp in September and handcraft the Tenderfoot Stomp dry red wine, which can be Merlot, Syrah, or even Colorado Zinfandel! Sample our wines and savor a glass of your favorite vino with local charcuterie while enjoying majestic mountain views.   1995 Paso Robles Zinfandel
This rare library reserve Zinfandel was a huge hit at the 2002 ZAP Tasting at Fort Mason! Made completely from grapes grown in the oldest part of the Twin Hills Vineyard, located two and one-half miles west of the town of Paso Robles in San Luis Obispo County. These half century old vines produced an intense, full-bodied wine with rich flavors of berry fruit and jam. Over two years of aging in small American oak barrels add to the wine's intriguing complexity and depth. This special Zin tastes wonderful today and will continue to taste great for at least another decade.
  Pavona Chardonnay-Blanc
Pavona 2000 Chardonnay-Blanc is a unique combination of barrel fermented Chardonnay (85%) and Pinot Blanc (15%). All of the grapes were grown in Monterey County's Santa Lucia Highlands, ideally suited for producing wines with lush fruit and intense flavors. Pavona's 2000 Chardonnay-Blanc is 100% barrel fermented. 50% of the wine was allowed to go through a secondary malo-lactic fermentation which contributes to the wine's rich texture. The delicious green apple and butterscotch flavors are complemented by toasty oak nuances derived from one year of aging in small French oak barrels.
  Purple Peacock Syrah
Pavona's first Syrah, a bold, rich wine bursting with concentrated flavors of cherries, plums and toasty French oak. Over 18 months of small oak barrel aging has contributed to the wine's rich mouthfeel and beautiful bouquet. This zesty wine will appeal to Rhone wine aficionados, as well as Zin lovers!
  The Pinot Noir
Pavona Wines has carefully selected the highest quality grapes from the most prestigious grape growing regions of Monterey County for its Pinot Noir. Arroyo Seco and the Santa Lucia Highlands are both among the best growing regions for Pinot Noir grapes in California. The climate allows for a longer growing season which heightens the concentration of fruit flavor in this delicious wine. Pavona's Pinot Noirs have consistently received rave reviews from the wine press for their supple character and elegant varietal flavors. The 2001 Pinot Noir was patiently aged in small French oak barrels for twelve months. Our 2001 Pinot Noir is a silky wine with delicious cherry flavors and complex oak nuances. The wine has distinctive varietal character and a rounded mouthfeel. This is an extremely versatile wine. Try it with chicken, prime rib, turkey, salmon, and soft cheeses.
