After four years of eagerly waiting, Silver Moon welcomed its inaugural harvest in 2008, and the celebration has only begun.   Cabernet Sauvignon
Our full-bodied Sonoma Coast Cab has the elegant flavors of black currant, cassis, black cherry, and black pepper. There are complex aromas of tobacco leaf and vanilla. Great intensity and depth of flavors in this wine. Food Pairing: Great steaks, grilled lamb chops, hard cheeses – cheddar, pecorino, parmigiano reggiano; even a 60–77+% dark chocolate bar loves a glass of Cabernet now and then.
Clearly the world’s most popular white wine variety, everyone seems to have a style they like best. Our Chardonnay is sourced in the Sonoma Coast appellation of California. We have chosen a style that fits with the overall Silver Moon profile of quality and value. Forward fruit aromas and flavors of Granny Smith apples and notes of citrus both combine to make a wine that is both easy to drink and makes a great match with foods that everyone enjoys. Try with sautéed, baked or grilled salmon or other firm fish; a Wisconsin fish boil; the hearty flavors of a roast turkey dinner and the cheese and fruit plate after. Delicious.
Made from Michigan cranberries, this wine is bright, tart and refreshing. A great glass of fruit wine that will make almost anything taste better. Make a delightful spritzer by adding some club soda and ice.
  Moonlight White
A blend of 60% Illinois Cayuga blanc and 40% Illinois Vidal blanc. Cayuga lends brightness and crispness to the blend, grapefruit, melon and peach, apple and pear fruit flavors, poached pears, mead flavors with a zippy lemony finish. Vidal lends fruit intensity, body and structure – with hints of juicy oranges and tangerines. Enjoy the vibrant youth of this wine – its light, crisp sweetness gives Moonlight White a pleasant, approachable experience as an aperitif. Its firm, supple acidity makes the wine intriguing and enjoyable with a wide variety of foods. Try with simply sautéed or baked whole fish, chicken, tuna and vegetable salads, roast chicken and pork tenderloin. Just about any cheese you like will surely taste better “by the Moonlight.”
A full bodied deep garnet red wine from Central Illinois vineyards. This wine has aromas and flavors of cinnamon and sweet, ripe plum fruit. Its medium, balanced finish shows good acidity for full-flavored foods. NOTES Rich flavors to pair with grilled meats – steaks and chops; add to rich roast beef stews; will match well with firm, aged cheeses, cheddars and gruyere; great with rich, bitter-sweet chocolates.
  Pinot Noir
Our fine medium-full bodied red from the Sonoma Coast. Pinot noir brings elegance to the mix. Forward cherry and ripe plum fruit aromas and flavors. Medium, balanced finish with nice acidity. A delightful wine with grilled firm fish – salmon, tuna; roast pork and chicken; semi-hard cheeses – edam, gouda, gruyere; dreamy with a creamy brie or luscious camembert too.
  Red Velvet
A blend of 50% Illinois Chambourcin and 50% Illinois Corot noir. Firm berry fruit and an easy-drinking texture reminiscent of wines from southern France. Medium ruby-red with a medium body and balanced acidity. Flavors and aromas of cherries, spice, plum, and dried fruit complexities leading to big softened tannins on the aftertaste. Red Velvet has attractive berry and cherry fruit flavors on the medium finish. Try this wine with grilled steak, BBQ pork, even grilled hearty vegetable dishes. Firm cheeses will nestle in the comfort of this “Velvet wine.”
A blend of 70% Illinois Traminette and 30% Illinois Frontenac. A vibrant rosé color makes every day a special day. Exciting aromas of cherry, strawberry, lychee and white peach. This engaging wine will make delicate flavors come to life on the palate. Twilight is persistent and refreshing with a hint of spiciness in the medium long finish. Food Pairing: Fresh fruit, cheeses, spicier dishes.
