Thank you for your interest in Capiaux Cellars. Pinot Noir has always been recognized as one of the noblest red wines, and also one of the most difficult varieties to produce. It has many faces and expressions, from light and fruity to dark and earthy. It is these nuances and qualities that excite us to continually pursue the "Holy Grail" of Pinot Noir. Sean Capiaux founded Capiaux Cellars in 1994, Capiaux cellars is dedicated to producing single vineyard bottlings of Pinot Noir. The philosophy is to produce wines that express the unique location from which they came, a sense of place or distinctive quality that sets them apart. Therefore, only high quality, low yielding, select clonal grapes are used, from unique viticultural areas.

Chimera Pinot Noir
2005 Chimera has a dark ruby garnet color. Rich and heady aromas of ripe plum, pomegranate, brown sugar and spice with sweet oak and high tone cherry notes. Big and bold on the palate with a persistent finish.

Freestone Hill Pinot Noir
2005 Freestone Hill has a dark ruby purple color. Sweet nose of plum sauce, forest floor and black cherry jam. Spicy tannins, full-bodied texture and silky smooth finish with great purity.

Garys’ Vineyards Pinot Noir
2005 Garys’ Vineyards has a bright red color and a dark ruby core. Cool black cherry fruit with a spicy black currant and smoky aroma. Supple flavors, balanced acidity and smooth tannins reflect its terroir.

Pisoni Vineyards Pinot Noir
2005 Pisoni Vineyards has a deep ruby color with a purple center. Fresh mushroom, smoky damp earth and ripe black cherry fruit aromas with espresso bean intermixed in this concentrated wine. On the palate, flavors of blackberries and a touch of anise are spicy, rich and lush with silky tannins, gaining richness and depth on the finish.

Widdoes Vineyard Pinot Noir
2005 Widdoes Vineyard has a dark, ruby-red color with a purple hue. Lively aromas of plum, mixed raspberries, currant, toffee, underbrush, and a smoky finish. Powerfully balanced on the palate with cinnamon, clove, ginger and blackberry yet sufficient tannins to age. Elegant and pure.

Wilson Pinot Noir
The 2005 Wilson has a deep crimson color with a dark purple core. Underbrush and earthy aromas with hazelnut and blackberry fruit are framed by a smoky finish. Powerful flavors of raspberry, espresso beans and cherry cola are structure by strong tannins and acids that bode well for cellaring.
