Ste. Chapelle Winery This holiday season lavish in the sweet, rich taste of Ste. Chapelle’s Ice Wine. Ice Wine alone can be a luscious dessert or a delicious pairing with other desserts. Serve as a special treat to guests, or a romantic indulgence for two. Ste. Chapelle began making Riesling Ice Wine in 1998 and has since produced 2001, 2002 and 2003 vintages, with a larger production planned for 2004. “Idaho has the perfect climate for making Ice Wine,” says Chuck Devlin. The growing season is very warm, bringing the grapes to full ripeness. Then, by the end of the harvest, temperatures will freeze early in the evening, falling into the low teens. Temperatures stay low until well after noon the following day, sometimes never warming past freezing. This temperature swing happens quickly after the normal harvest, while the fruit is still in good shape, enabling the winemaker to create a wine that is not only very sweet and condensed, but also free of any off odors. This has been an advantage for Ste. Chapelle, as the 2002 vintage won “Best of Class – Dessert Wines” at the 2004 West Coast Wine Competition. Ste. Chapelle’s 2003 Ice Wine Riesling is shaping up to be just as great. In 2003, extra hang time and a subsequent hard freeze produced an Ice Wine bursting with aromas and flavors of peaches and apricots. The wine’s crisp acidity beautifully balances the high residual sugar. Although making Ice Wine is tedious, Chuck Devlin knows it’s well worth the trouble. And with consumers clamoring for more, he keeps his fingers crossed that the 2004 harvest will once again bring the perfect weather conditions for making Ice Wine.

Driving on highway 55 from Nampa, follow as it turns south toward Marsing. Watch for the signs and turn left at Lowell Road. Go up the hill toward the vineyard and drive left through the gate.

  Blush Premium
This Blush has been carefully blended from Idaho grapes to create a wine that has a delicate aroma of fresh raspberries, strawberries and cherries and a soft, balanced finish. With crisp acidity and an off-dry finish, it is the perfect complement to picnic fare or as a summer afternoon sipper.
  Cabernet Sauvignon
In the past few vintages, the quality of the red wine has risen spectacularly and no variety more than Cabernet Sauvignon. We are now producing wines that rival any appellation. Our 2000 Cabernet Sauvignon is an elegant wine, with a deep color and an intense aroma of black cherry, spice and chocolate and a full-bodied, smooth finish. We are now producing wines that rival any appellation. The quality/price value on this wine is unmatched. Our 2001 Cabernet Sauvignon is an elegant wine, with a deep color and an intense aroma of black cherry, spice and chocolate and a full-bodied, smooth finish. It was made with a combination of old and new-world techniques to produce the finest wine possible.
  Chardonnay
"Our 2000 Chardonnay is a rich, full-bodied dry wine made from premium Chardonnay grapes. It has a pleasing aroma of apples, lemons, vanilla, and oak and a supple finish balanced by a crisp acidity. We picked the grapes for this 2000 vintage starting in late September. After crushing and pressing the grapes, we barrel fermented and aged 50% of the wine in small oak barrels. The remainder was cold fermented in stainless steel tanks to retain its fresh fruit character. Three percent of the blend went through malolactic fermentation to increase the richness and body. Serve this 2000 Chardonnay slightly chilled with meals that call for a dry, full-flavored white wine." Chuck Devlin, winemaker

This wine is easy to love. Appealing fruit, dry but not bone dry… it is perfect with a wide range of traditional white-wine foods. It is partially barrel fermented and partially cold fermented
  Ice Wine Riesling
Extra hang time and subsequent hard freeze produced an Ice Wine bursting with aromas and flavors of peaches and apricots. The wine’s crisp acidity beautifully balances the high residual sugar.
  Merlot
The wine has lots of dark cherry fruit, good acidity and a full-bodied structure. It should age well and is well suited to grilled red meats.

Our 2000 Merlot was rated an outstanding best buy by Winepress Northwest magazine and this effort is just as impressive. The grapes were fermented warm, and had a full 10 days of maceration to extract as much color and flavor as possible. At the end of fermentation the grapes were lightly pressed, settled and then racked into barrels. Every barrel was tasted and only the finest went in to this blend. For those who doubt the quality of red wine from ID: one sip of this wine should make believers out of them. This is an outstanding wine. The wine has lots of dark cherry fruit, good acidity and a full bodied structure. It should age well and is well suited to grilled red meats. Chuck Devlin, winemaker
  NV Sparkling Brut
This Sparkling Brut highlights the delicacy and elegance that results when premium grapes are skillfully made into sparkling wine. We select specific vineyards to make into our Sparkling Brut. Chardonnay and Pinot Noir grapes are harvested early, with the precise grape sugar and acidity balance that is necessary when making a sparkling wine. The grapes are first crushed and fermented into still wines. We than assemble a traditional blend of 70% Chardonnay and 30% Pinot Noir, which is put through a cool secondary fermentation to produce the sparkle. Chardonnay is the backbone of this wine, with the Pinot Noir adding a richness and complexity to the structure. Creamy fruit flavors, very fine bubbles and a long dry finish make this Brut and elegant addition to special meals and celebrations. Serve well chilled.
  NV Sparkling Riesling
Our Sparkling Riesling is unique because we start with premium Johannisberg Riesling grapes to make our cuvee. Selected vineyards are harvested early, with a precise grape sugar and acidity balance for making sparkling wine. The grapes are first crushed and fermented into a still wine, and then this cuvee is put through a cool secondary fermentation to produce the fine bubbles. A light Riesling aroma of apricots and peaches is echoed in the fruit flavors on the palate. Finished with a small amount of residual sweetness, this wine offers uncommon versatility when planning any occasion. Serve well chilled at parties, picnics, brunches, festive meals and everyday celebrations.
  Riesling Winemaker Series
This off-dry wine has all the varietal characteristics of the Riesling grape. Aromas of ripe peaches, nectarines and apricots accompany peach and citrus flavors with a slight touch of honey and talc. It has crisp acidity and a long, fruit-filled finish
  Rsrv. Series Special Harvest Johannisberg Ri
The special harvest blend is comprised of the best lots of Riesling. To produce this intensely sweet and fruity wine, we first crushed the freshly picked grapes and immediately pressed the juice off of the skins. We fermented the juice slowly at a very cool temperature to retain its fresh fruit aroma, and then, at a precise level of residual grape sweetness, we stopped the fermentation by further chilling and filtration. The resulting wine has a lush aroma of apricots, peaches and tropical fruit, and a richly sweet and lingering finish.
  Soft Chenin Blanc
This Soft Chenin Blanc bursts with flavors of pear and ripe melon. Fermenting the juice in stainless steel tanks preserved the fresh fruit character of the grapes. It is finished sweet, but balanced with crisp acidity
  Special Harvest Johannisberg Riesling
Lush and sweet, with tons of apricot and peach in the nose. A great dessert wine or enjoy with fresh fruit. Over the past twenty-five vintages, Ste. Chapelle has built an enviable reputation for producing exceptional Johannisberg Rieslings. In 2003 we experienced an outstanding vintage. This wine is made by stopping the fermentation at just the right time, and only using only the cellar’s best lots of Riesling. Year after year, this technique yields extraordinary wines
  Winemaker Series Chardonnay
2000 Winemaker Series Chardonnay Idaho vineyard: Arena Valley,Dakota,Ellenburg,Bitner,Rock Creek,Chicken Dinner,Ocker,Judd,Old Block Vineyards oak type: mixed tasting notes: "This 2000 Chardonnay has a delicious aroma of ripe apples and figs, and the flavors are long and rich, with a finish of crisp acidity that will balance even the richest of foods. We started picking the grapes for this vintage in September, 2000. After crushing and pressing each lot of freshly picked grapes, we barrel fermented the juice in small French and American oak barrels. Extended lees contact softened the finish and added complexity to the aroma. Supple, rich and full of fruit and toasty oak flavors, this wine can be enjoyed now, or it may be cellared for an additional three to five years from the vintage date." Chuck Devlin, winemaker

  Winemaker’s Series Chardonnay
The grapes were picked at peak ripeness, settled and then barrel fermented. An extensive lees contact program was employed. The result is a full flavored wine with tremendous fruit. A note of toasty oak is in the background. All of the fruit came from the Snake River Valley in Idaho
  Winemaker’s Series Fume Blanc
This is made from the Sauvignon Blanc grape. It can be obnoxiously vegetal if not grown and vinted properly or it can be beautifully charming as is the case here. Delicate to the point of almost being understated, it harks to the best efforts in New Zealand and the Central Coast of CA and begs: try me. In future years this is a variety that will gain a considerable, well deserved, outstanding reputation. Chuck Devlin, winemaker
  Winemaker’s Series Gewurztraminer
Gewürztraminer is one of the most distinctive wine grape varieties. The fresh grapes, along with the best wines, have a characteristic spiciness mixed with floral and citrus aromas. Our Gewürztraminer is finished drier and richer than most. Its full body and fruit flavors make it ideal to pair with mildly spicy or smoked foods. It is especially nice served as an aperitif, or as a picnic wine with chilled fresh fruit and smoked cheese.
  Winemaker’s Series Gewurztraminer
The is one of our pair of Alsatian-styled whites. It has aromas of peaches and apricots and an unusual (at least for this variety) dryness that makes it a beautiful food wine.
  Winemaker’s Series Ice Wine Riesling
Tedious and laborious to produce, it is well worth the trouble. The wine is sweet and filled with the aromas of peaches and apricots. Serve chilled as a dessert. Our Ice Wine is made by hand picking Riesling grapes from our Winery Hill Vineyard and pressing the clusters while still frozen. Because the water is frozen, the sugars, acids and flavor components are concentrated.
  Winemaker’s Series Johannisberg Riesling
"Over the past twenty-five vintages, Ste. Chapelle has built an enviable reputation for producing exceptional Johannisberg Rieslings. In 2002, our Riesling grape clusters ripened slowly over a three-week period. The resulting wine shows ripe, concentrated Riesling fruit flavors, crisp acidity and a long, flavorful finish. We began harvesting our Riesling grapes in early October. By crushing, pressing and fermenting the juice at a low temperature, we were able to retain the fresh Riesling fruit character along with a small amount of natural grape sweetness. This 2002 vintage has an aroma of apricots and peaches and a long, fruit-filled finish. It makes a delightful accompaniment to light meals, or serve well chilled as an aperitif."   Winemaker’s Series Soft Chenin Blanc
Our Soft Chenin Blanc has all of the delicate pear and melon aromas present in freshly picked Chenin Blanc grapes. To preserve this fresh fruit character, we cold ferment the juice and then stop the fermentation to retain a high level of natural residual sugar. This wine tastes sweet and rich, with abundant fruit flavors and a clean, crisp finish. Serve well chilled with fruit and cheese, light desserts or alone as a delightful aperitif.   Winemaker’s Series Syrah
This was my second harvest at Ste. Chapelle Winery and we enjoyed a typical growing season for this appellation, warm days and cool nights that produce a wide range of outstanding wines. The 01 Syrah is a wine with better color and structure than the excellent 2000 vintage. It is a wonderful companion to red meat and pasta. Syrah is a noted Rhone variety although it has made another name for itself, Shiraz, in the land down under. It is perhaps the most consistent red variety here in Idaho. It yields wine of good color, fruit and structure, year after year.
