Part of what makes Trout Springs Winery special is the fact that it is one of the few wineries in Wisconsin that produces an estate bottled wine. Careful attention to detail is our motto due to the limited production acreage, hence more emphasis is made towards quality, rather than quantity. Another unique aspect of Trout Springs Winery is that it is the only winery in the state with a game farm, plant nursery, and trout production facility all on the same site. It was only natural that the marriage of a fine vintage, be made with an already exquisite culinary experience. New grape varietals are constantly being grown and evaluated for taste and hardiness. Over 40 varietals have gone through production and taste trials at Trout Springs since 1995. With no other vineyards in the area, each varietal must be tested for a minimum of three years to see if it is worthy of being produced at Trout Springs. Due to the short growing season and harsh winters, each cultivar must possess specific qualities to make the "final cut" for production. The importance of time-honored traditions such as, harvest management to barrel fermentation and aging, ensures that the final product will always be as high of a quality as can be reached. The total process is never rushed, as we believe that patience is not only a virtue, but a necessity when trying to achieve the finest product nature can give you.
