Castoro Cellars

Castoro Cellars The husband and wife team of Niels and Bimmer Udsen established Castoro Cellars with the goal of producing world-class wines from Paso Robles-appellation grapes. Each vintage presents a new challenge and Niels is more than willing to constantly and creatively experiment. This on-going research is only one of the things that ensures they meet their goal. Niels' long-time nickname "Beaver," evolved further when he was working in Italy and his friends soon took to calling him "Il Castoro," which is beaver in Italian. The name and the motto stuck. Castoro Cellars' "dam fine wines" sport a picture of a beaver on each label. Castoro is now a winemaking team effort. The team includes Niels, his mentor Tom Myers, and Mikel Olsten. Together they discuss and decide how they want to handle each variety.

  Cabernet Franc Reserve
This wine is a blend of Cabernet Franc from two different appellations, Cienega Valley in San Benito Co. and our own Paso Robles. Both appellations are moderately warm coastal locations, just the type of climates ideal for making quality red wines. Cabernet Franc is a highly regarded variety originating from the Bordeaux region of France, often being blended with Cabernet Sauvignon, Merlot, and Malbec. The Castoro Cellars Cabernet Franc is 85% Cabernet Franc and 15% Petite Verdot. You will find this wine of medium body while elegant in character. The aroma is of ripe fruit with flowery notes, plus it has the added complexity of oak vanillins. The tannins are moderate and the wine will continue to age favorably over the next several years.
  Cabernet Sauvignon
The 2003 grapes had great intensity and color. Our Stones Throw vineyard is a major component of this wine. In addition to Cabernet Sauvignon, this wine contains 15% Petite Verdot to add complexi-ty. Packed with rich berry, full fruit and capped with a toasty oak note from the integration of French, American and Hungarian barrels. The finish fills your mouth with lush flavors that are not blown away with excessive tannins. History shows however that this Paso Robles Cabernet Sauvignon will age nicely in your cellar. Bring it out in five years for an amazing treat! Enjoy with any hearty entrée or with a selection of rich cheeses.
  Cabernet Sauvignon Reserve 2002
Seductively aromatic, rich and stately, this Cabernet Sauvignon is one of Paso Robles’ heavy hitters. We hand pick the best barrels of the lot to make this limited release.
  Chardonnay Central Coast
This wine is rich in every sense. We have blended several local vineyards, Hog Canyon, Blind Faith and Abernathy, to create a complex wine full of citrus and apple notes. Roughly fifty percent of this vintage underwent barrel fermentation. The barrel fermenting and subsequent aging has contributed oak aromas with a lush mouth feel and a lingering crisp finish. This wine will complement any seafood and really stand out with rich cream sauces on pasta or chicken. Serve only slightly chilled to allow the aromas to fully open up.
  Due Mila Tre
We took our favorite Bordeaux varietals from the best barrels of the lot to make this beautiful "Meritage" style blend. If you enjoy wines with a lot of barrel character, forward fruit and comlexity, this wine is for you. A tasting room favorite!
  Fume Blanc
One of my favorite white wines, and a beautiful wine with shellfish appetizers and most light fish entrees. A portion of this wine is barrel fermented and aged three months sur lies, then blended with the remaining lot for an additional month. This is a fresh and crisp vintage, with classic Sauvignon Blanc aromas. The mouth is clean and has lingering citrus notes. I suggest that you sauté scallops in butter with a bit of this wine and garlic. Squeeze a bit of lemon on top and serve with this chilled Fumé Blanc.
  Merlot
The 2003 vintage in Paso Robles produced intense fruit flavors and aromas. The weather was nearly perfect which allowed the grapes to reach full maturity with great balance in acid and sugar. You will find that this Merlot has a subtle but full nose of fruit and oak. We use a combination of newer and older American oak barrels to attain the barrel aged character without an overbearing oak component. This wine is great with any roasted meat or vegetable dish. Try it with barbecued steaks smoked with wine soaked oak staves for a real treat!
  Muscat Canelli
The fresh fruit and flowery aromas are just as intense in the wine as they were in the fruit. This wine can be enjoyed as an aperitif or enjoy the freshness with fruit deserts. Interestingly, it's a treat with very spicy foods.
  Muscat Canelli Late Harvest
Back in my days at Estrella River Winery we made a Late Harvest Muscat Canelli and I was always fascinated by the rich thick juice that came out of the press to make this wine. It wasn't until the 2000 vintage that we had the right grapes to produce one of our own. The 2003 vintage is even more intense! The grapes came from our Stone's Throw Vineyard and some of the rows were tagged before harvest for the extended ripening. The results produced a very aromatic wine with hints of apricots and pears. Fortification stopped the fermentation and retained the fruit's natural sweetness. Enjoy after dinner with fruit desserts.
  Petite Sirah Shell Creek
For many years we have enjoyed Petite Sirah as wine that helps add complexity and depth to many varietals. The Shell Creek Vineyard has been an integral component, and this year we've produced a single vineyard bottling to showcase it's quality. The aromas in the wine contain a certain jamminess including blackberries and very ripe plums. The mouth is lush and full with a balance of oak flavors and moderate tannins. A great wine to complement any hearty grilled entrée. You will be able to enjoy this wine for many years.

  Pinot Blanc Bien Nacido
From the famed Bien Nacido Vineyard in Northern Santa Barbara County. The cooler growing conditions allow the fruit to mature slowly which creates lovely floral qualities and a complex, distinctive flavor profile.
  Pinot Grigio 2003

  Pinot Noir 2002 Bien Nacido
Close your eyes and take a sip, take another, ah yes, just like Burgundy...in a good year! Toasted flambé cherry finish.
  Pinot Noir Blind Faith
From our own Estate Vineyard, this wine has overtones of ripe cherries with hints of baking spices and vanilla. Delicious with everything from Turkey & Prime Rib to Salmon & Portobello Mushrooms.
  Primitivo 2002
West-side Zinfandel crafted in an Italian style. This wine is best when decanted and served with smoked meats and pungent cheeses.
  Rosato Di Syrah
The innaugural release of our dry "Rhone" style Rose'. A versatile wine that goes well with everything from turkey to fish. It's also a great first course wine and is delicious with lunch.
  Sangiovese 2002
This is our 4th Sangiovese release and we are having fun working with this variety. We have been tasting other producers wines, and have yet to figure out what exactly is typical for a Sangiovese. The grapes for this vintage were perfectly ripened and produced a very rich wine. We are proud to say this is truly a style of Sangiovese we feel is outstanding. You will note aromas of allspice, cinnamon and vanilla from the oak age coupled with rich, ripe fruit nuances of plums and dried apricots. Enjoy with baked rigatoni smothered in a rich red sauce topped with Parmesan cheese.
  Syrah 2001
Paso Robles Syrah is piquing the interest of many people in wine circles. The Castoro Cellars 1999 Syrah was very well received by Robert Parker in his publication. The 2001 grapes for this wine were sourced from the same well-tended vineyards in the Estrella area of the Paso Robles appellation. In the aroma you will find a high intensity and balance of berry fruits, violets and oak. The mouth feel has characteristically moderate levels of tannin, yet is lush. The bright fruit and oak flavors linger on the palate. The moderate acidity and appealing level of astringency make for a versatile wine that pairs well with anything from appetizers to heavy meat dishes.
  Tango
Tango 2004 is the inaugural release of our Reserve White Blend. It is made up of 34% Pinot Blanc, 33% Chardonnay and 33% Viognier.
  Tempranillo
This wine started as a Wine Club exclusive and has been so successful that we have added it to our quiver of wines. The Tempranillo grape has been an integral part of the Rioja wines of Spain for many years. In Spain however, it is blended with several other varieties to produce the style they desire. The grape and many of its characteristics resemble Zinfandel. You should note a bit of allspice, plums and strawberries in the nose and a lingering finish of fresh fruit in the finish. Great with your next batch of Paella!
  Ventidue Anni
Ventidue Anni marks the twenty-second year of Castoro Cellars and we are proud of the vintages those years have produced. Together, Tom Myers, Mikel Olsten and Niels Udsen, put their collective palettes in high form to create this rich, supple and complex wine. The components for this wine vary slightly from year to year, but in different proportions. We feel this wine is a masterpiece of blending and a testament to the greatness of the Paso Robles Appellation. If you have the patience to age this wine you will surely be rewarded. Any hearty entrée will benefit from this wine.
  Ventuno Anni

  White Zinfandel
White Zinfandel has become one of the more popular wines today. Our White Zinfandel is made in a style that lends itself to being enjoyed with or without a meal. The wine's bouquet is full of fruit characters, berries, cherry, and watermelon though not overly intense. The flavors are delicate and full of the Zinfandel fruit, all this is balanced with a slight bit of sweetness to make this off dry wine clean and brisk in the finish. Enjoy it now for any reason, sipping, picnicking, or with your favorite meals.
  Zinfandel 2001 Giubbini
The Giubbini Vineyard is located on the steep chalky hills of Templeton. The vines struggle to produce mature grapes under these conditions. This vineyard has become an integral part of our Zinfandel program. In 1995 we selected a few barrels that stood out because of the wine's particularly intense fruit characters and bottled it separately. Ever since that first vintage we have continued to produce a vineyard designated wine. This wine is intense from start to finish. You will note an abundance of berries, plums and raisin notes. Once you try it you'll be hooked like everyone else! Enjoy this wine with most hearty entrees.
  Zinfandel 2002 Paso Robles
Our zinfandel is created from vineyards in the Templeton area of the Paso Robles appellation. Very intense ripe fruit prevails as the grapes are generally picked at over 24° brix giving a hint jamminess to the wine. You will find typical Zinfandel fruit with slight raisin and spice notes. Our Paso Robles Zinfandels routinely win Double-Golds and Best of Class in the wine competitions.
  Zinfandel 2002 Zinfusion
The "Zinfusion" (formerly Vineyard Tribute) is a marriage of a select few vineyards that complement each other to produce a unique wine that showcases Paso Robles Zinfandel. The 2001 vintage was one of the biggest styled Zinfusions to date, and the 2002 follows suit. This wine is a Zin lovers dream wine! You will be engulfed in ripe and jammy fruit aromas and flavors as you enjoy this wine. This is a big wine and is enjoyed with rich pasta and meat entrees.
  Zinfandel Cobble Creek
This wine is from vineyards that surround Niels and Bimmer Udsen's home and the tasting room. All the grapes are grown in the traditional head pruned style with limited production. These grapes are grown to produce wines of distinction with deep color and flavor extraction. We are noticing that this vineyard tends to exhibit great raspberry fruit notes. As you enjoy the bouquet take notice of the elegant fruit and ripe plum aromas coupled with the spiciness characteristic of rich Zinfandels. Enjoy this limited bottling now or hold some to compare with future vintages.
  Zinfandel Late Harvest "Port"
We have perfected the method for making this wine. We chose ten rows from our Cobble Creek Vineyard and net the vines to protect them from birds. The grapes are then left to hang and raisin up for about one month after the primary picking. This creates grapes of unmatched intensity and sugar. The raisins soak up juice and more sugar is released as the juice ferments. We fortify the fermented juice with distilled wine spirits to stop the fermentation and maintain the proper sugar balance. This creates an intense wine, full of plum and spice. Enjoy this after dinner, by itself, or with decadent chocolate desserts.
