Graystone Winery

Graystone Winery Hidden along Clifton's eastern border, Graystone is one of Colorado Wine Country's newest addition. Founded in 2001, the small boutique-style winery has just produced its first vintage featuring Pinot Gris, Pinot Blanc and a very limited quantity of PORT, its specialty. Built in 2002, the winery rests in the middle of the vineyards' 25 acre estate. The winery was named for the gray, majestic shale bluffs surrounding the Grand Valley. These bluffs and mesas are still home to a large band of wild horses. Long known for its fruit producing climate and soil, new vineyards are being planted everywhere in the valley. The micro-climate and soil are ideal for producing a remarkable vitality and character in the grapes. Warm spring temperatures and cool nights throughout the growing season provide perfect conditions for maturity and balance.

  Pinot Blanc
Look for creamy citrus, big and full bodied with lots of extracted forward, intense scents of tropical fruit and lemon citrus, plus vanilla oak. Along with the oak, a hint of earthiness define the nose. Smooth, round and luscious in the mouth while maintaining good acidity. Expect the spicy pear and long roasted nutty finish. Next year the desert wine will be released in small lots. Pinot Blanc is a versatile wine with any meal.
  Pinot Gris
The Pinot Gris has an intensity of flavor that you won't always find in white wines. It is an exceptional accompaniment to seafood, pasta and is a good selection for a summer aperitif. Full, rich, tart, it also works with spicy chicken. Juicy and bright flavors, crisp and dry with sufficient acidity for structure. It is a big full-bodied white wine with a distinctively textured palate and a subtle exotic bouquet. Our ripe-fruit is whole cluster pressed to reduce the phenolics that develop in the skin of the berry. Pinot Gris also know as Pinot Grigio in some countries is actually the same grape. It is said to be a mutant of Pinot Noir. Enjoy. Next year a late harvest ice wine will be released.
  Port
Next year Graystone will have an annual PORT and STILTON tasting. This wine goes well with Stilton bleu cheese and walnuts. Residual sugar is 10%, Alcohol is 19%.
