Caraccioli Cellars is committed to celebrating the quality of our Santa Lucia Highlands' grapes through a detailed and rigorous winemaking process. Our "fruit forward" wines showcase the high caliber of our grape vineyards. Caraccioli Cellars allows the essential flavors of the fruit to boldly shine through the wine, leading to subtle variation from year to year.
Caraccioli Cellars' wines begin in the vineyard under the meticulous supervision of winemaker Joe Rawitzer. Our Pinot Noir and Chardonnay grapes are hand picked and placed in small totes instead of the common practice of using large bins. This hands-on process enables us to limit incidental stress and pressure on the grape, thereby limiting premature crushing and juicing associated with conventional methods. By using labor-intensive procedures, we are able to avoid bruising of the grapes and ensure the rich expression of full fruit flavors while eliminating undesirable bitterness or stemminess.
The boutique nature of Caraccioli Cellars enables us to use barrel fermentation for all of our sparkle and still wines. Our use of the finest French Oak barrels available allows us to round the edge of the flavor profile and deliver a distinctly smooth and supple wine.
