Not long after Fr. Antonio Martinez began making acclaimed wines at Mission San Luis Obispo de Tolosa, immigrants from France arrived in California to enrich the burgeoning industry with their own distinctive expertise. These pioneers sought to grow the best grapes in the most hospitable climate, and age them in the finest barrels. They shared the belief that wines achieved their greated potential through natural processes, avoiding manipulation that might diminish the inherent personality of each vintage.
A Tribute to a Classic Style
It began in the late eighteenth century, when the first grapevine spread its roots through the rich western soil. Natural winemaking processes, combined with distinctive climate and terrain, established a legacy that was uniquely Californian. Each generation added its own expertise to create wines whose stature would earn the respect of connoisseurs the world over. Tolosa brings this same reverence for handcrafted quality to each vintage, presenting a family of varietals true to a vision that spans the centuries, from the old California to the new.
In the 1870s, France's misfortune became California's blessing. Joining a campaign to save French varietals from the phylloxera root louse, Pierre Hyppolyte Dallidet grafted French cuttings onto the hardy root stock still surviving at San Luis Obispo de Tolosa. The Burgundy of the Pacific. The location was fortuitous indeed. Like the Burgundy region of France, the Edna Valley balanced hot days with cool nights and challenging soil. These conditions proved ideal for producing grape clusters that were fewer in number, but lingered longer on the vine to yield flavor of exquisite intensity. The Tradition That is Tolosa. The commitment to evoke the natural sophistication inherent in the grapes of this classic California region lives on at Tolosa. We focus on Chardonnay and Pinot Noir varietals that yield the most intense results under Edna Valley's growing conditions. We follow a slow, handcrafting process that nurtures the wine through periodic gentle racking and minimal filtration. And we allow nature to determine the character of each vintage. This is the way California's winemaking heritage first began.

Driving South to Tolosa Winery: Hwy 101 South
Exit Madonna Road and make a Right at the stop light. Right on Higuera Street. Left on Tank Farm Road. Right on Broad (Edna Road). Go past the San Luis Obispo airport on the Right (and slow down). At the Buckley signal make a Left into Tolosa driveway (Edna Road)
Proceed straight up the driveway. Driving North to Tolosa Winery: Hwy 101 North. Exit Price Street. Turn East (Right) on Hinds Ave./Price Canyon Road. Proceed approximately 8 miles to Hwy. 227 (Carpenter Canyon Road). Turn North (Left) and proceed 2 miles. At the Buckley signal make a Right into Tolosa driveway (Edna Road).

A blend of 68% Syrah and 32% Grenache. A very focused and complex wine with deep berry flavors and notes of violet and lavender. The floral-berry impression is vibrantly aromatic.

Petite Sirah
Aroma of ripe plum and blackberry combine with hints of cedar and spice cabinet. Good balance.

Pinot Gris
A fresh honeyed spice with a citrus backdrop and great acidity give this crisp wine great balance.

Pinot Noir
Crimson-tinted garnet color. Striking aromas of strawberry and blueberry with rose petal floral aspects. Flavors are perfectly balanced and ripe. Fantastic weight on the palate, with supple middle fruitness, and a chewy, crisp aftertaste to hold all of the elements together. For drinking now through 2010.

A dry style Rosé with a soft luscious texture and flavors of plum, berry and lavender. The perfect summer quaffing wine.

Lively and fresh with flavors of grapefruit, pear and honeydew melon. Wonderful aromatics of honeyed-lime blossom.

Morning herb garden aromatics atop pungent blackberry and smoky bay leaf. Flavors are of juicy black fruits, peppered game, and dried cherry. Slightly youthful tannin provides pleasant grip preceding a lusciously long finish.
