DeLille Cellars

DeLille Cellars Founded in 1992 by Charles Lill, Chris Upchurch, Greg Lill, and Jay Soloff, DeLille Cellars is a small winery located in Woodinville, Washington. Simply stated, our goal is to make the very best handcrafted, old-world style red and white wine made in the State of Washington. We are a family and independently owned winery with an uncompromising philosophy about the quality of what will be in your bottle of wine. DeLille Cellars currently produces four Bordeaux-styled wines: Chaleur Estate Red, D2, Harrison Hill and Chaleur Estate Blanc; and also a Northern Rhône-styled Syrah named Doyenne. We have built a traditional “chai” styled winery on the family farm owned by the Lill family. This beautiful ten-acre site sits above the Woodinville valley floor, overlooking the wineries of Chateau Ste. Michelle and Columbia Winery. The traditional DeLille Cellars structure allows for winemaking methods as in the finest chateaux of Bordeaux, including open top fermenters and an underground barrel cellar. All wines from DeLille are made with the highest “hand-crafted” standards. Only grapes from the oldest and best vineyards in Washington State are acquired. They, in turn, are hand picked and hand sorted at crush, using only the finest berry clusters. Our wines are aged in 100% new French Oak barrels each and every year and are never filtered. DeLille Cellars was named Winery of the Year 2000 by the New York Times on the web at Winetoday.com. Robert Parker Jr. of the “Wine Advocate” rated us as one of the top four producers, bestowing the title of the “Lafite Rothschild of Washington State”. Decanter placed our 1998 Chaleur Estate in their Pacific Northwest Top Ten List, giving it their highest rating of five stars and chose 1999 Harrison Hill as a recommended Wine of the Month in May 2002. The Institute of the Masters of Wine in London, England also honored DeLille Cellars with the “Certificate of Excellence” award, the only winery from the northwest to receive this honor. Six of the last seven years, the DeLille Cellars Chaleur Estate was awarded scores of 91-96 points and a platinum medal, as well as being declared twice one of the top 100 wines of the world by “Wine Enthusiast Magazine”. Wine Spectator rated the 1999 Chaleur Estate with a score of 93 points in June 2002 and the 2000 Chaleur Estate with a score of 91 points in September 2003. In 1997, DeLille Cellars broke the record for the highest price paid for a bottle of Washington State wine at auction ($16,000).

  DeLille Cellars Chaleur Estate
This wine has a deep, concentrated nose of jammy blueberries, black cherries, tar, plums and cedar. There is also a beautiful floral component and pencil snap notes in the bouquet. The flavors combine cassis, blueberries, huckleberries, black cherries and pepper. This wine also has beautifully integrated vanilla oak tones and a suburb finish, making this a “classic” Chaleur Estate.
  DeLille Cellars Chaleur Estate Blanc
This vintage of Chaleur Estate Blanc has a rich bouquet of sweet straw and hay, and though there is only 21% Semillon, the smoky fig notes of that grape comes through as well. This wine has flavors of citrus, grapefruit and stone fruits which are nicely wrapped with creamy-oak tones and a long crème brulée finish.
  DeLille Cellars D2
D2 ’04 is focused and has bright black cherry and berry aromas with cigar box oak. It has nuances that wrap nicely around the silky Merlot texture. The flavors show lush cherries and blackberries with black pepper spices, and is already showing a lengthy finish.
  DeLille Cellars Grand Ciel
This wine’s black-brick color announces the concentration that follows. There are diverse aromas of cedar, plums, tar, leather, Bordeaux-style herbs and spices, olives, black fruits and tobacco. The tannins are firm yet silky and classy. All the fruit, oak, acidity and alcohol are completely balanced and harmonious. The flavors exhibit impressive black fruit and black cherry concentration. The wine has a deep and expansive mouth feel. This is a “complete wine” that is delicious, complex, concentrated and a very long, lingering finish.
  DeLille Cellars Harrison Hill
The 2004 Harrison Hill is a darker and denser version than normal, with cracked black pepper, Bordeaux-style herbs, and classic black cherries in the nose. There is also a gravelly minerality that adds to the complexity. In the mouth this wine is “classic” Harrison Hill with black cherries, leather, red plums and vanilla oak tones. Because of great concentration, wonderful structure and lengthy finish, this wine will give enjoyment for a long time.
  Doyenne Aix
This wine has a deep black raspberry nose with molasses, bone marrow, and cardamom notes. Black raspberries, Asian spice and other dark fruits show pronounced Syrah flavors, while the structure is all Cabernet Sauvignon. This wine has a solid core and firm, soft-ripe tannins.
  Doyenne Métier
This wine has a black-purple color and is a Châteauneuf-du-Pape style blend. It has sweet rhubarb and juicy strawberry aromas with cherries and kirsch liqueur. The flavor is expansive and rich with strawberry pie notes, and mouth watering juicy acidity. Because of all its fresh mixed berries and cream characters, this wine is delicious and plush. Drink this wine now or hold for medium-term aging.
  Doyenne Métier Blanc
This Viognier-Chardonnay blend has vibrant aromas of citrus, lemon peel, stones, white flowers, jasmine, and lime blossom. This wine’s mouth-watering flavors of juicy lime acidity, delicate butterscotch and honey makes it a delight for sipping with friends, with appetizers, or with flavorful foods.
  Doyenne Roussanne
The vibrant honeysuckle, lime, and delicate white flowers express a very pretty bouquet in this wine. It is delicious with rich, plush flavors of lime and passion fruit that spread across the palate to a powerful and long finish. This is a classic Roussanne with no oak to get in the way of all of the delicate, elegant and fragrant nuances.
  Doyenne Syrah
Concentrated black raspberries, violets, lavender and white peaches are just a start of the complex aromas of the 2004 Doyenne Syrah. There is an interesting and hedonistic blend of these floral flavors with sweet, meaty, bone-marrow syrah characters along with oyster shell minerality. The flavors exhibit dense and broad black fruit characters tightly knit with black pepper spices. This is a youthful wine that is very showy now and promises much more.
