Cuillin Hills Winery (pronounced Coo-lin) was conceived when a Scottish girl and a wine loving bagpiper found themselves in the Highlands of Scotland; a place where dreams and possibilities are realized. Cuillin Hills Winery combines Washington’s premier vineyards with traditional wine making methods to create small lots of distinct wines with depth and character. Our primary focus is on Syrah, however expect annual offerings of other red wines. Oh, and be on the look out for the occasional, and extremely limited, surprise!

Claret
We sold out of the 2004 in a mere few months time so we had to, “give the people what they want”, once again for the 2005 vintage! The new version is a blend of 51% Merlot, 40% Cabernet Sauvignon, and 9% Cab Franc. This years Claret should once again be very popular.
Bright, with a nose of cherry, chocolate, and a hint of rose pedal. On the palate this wine is well balanced and has nice fruit and vanilla texture, however this years version finishes a little more stout in the tannin department. 2005 Claret will pair well with your favorite meat or pasta dish, cheese platter, or friendly conversation.

Grenache
This 2004 Grenache is packed with spice and earth, with a touch of fresh berry to give it a lively, crisp finish. This is a perfect summer time red, and goes great with spicy BBQ!

Syrah
The 2004 is a blend of 92% Syrah and 8% Cabenet Sauvignon from two vineyards of varying climates. The Alderdale vineyard shows dark cherry and currant, while the Mattawa vineyard adds a soft texture and cooked fruit. 30% new oak adds that great leathery, smoky quality. This wine's bold color and character will show best with additional bottle aging.

The Dungeon, Syrah
Many of you are familiar with this wine as you may have barrel sampled it’s components at our open house in March 2006. After much debate, blending trials, more blending trials… “The Sniper”, “Wahluke”, and the Windy Ridge Syrahs became very good friends. The Dungeon is 99% Syrah and 1% Cabernet Sauvignon. In a word, this wine is “large”. The nose shows off earth, mineral, cooked fruit and game characters backed up with rich, integrated tannins and a finish that lasts and lasts. This is food wine!

Viognier
The 2005 Viognier we call "tropical fruit salad in a glass!" The nose is spectacular, the palate balanced, and the finish is delightful. This is our favorite white wine and it won't last long.

Yakima Valley Sangiovese
Sangiovese is the predominant variety for Italian Chianti and an outstanding varietal wine when grown in the warmer regions of Washington State. Cuillin Hill's 2004 Sangiovese is 100% varietal from the Whitstran area near Prosser. This wine has rose, cherry, vanilla and licorice aromas with a hint of spice and earthiness that compliments the crisp finish.
