WE MAKE WINES: That are boldly refreshing or beguilingly reflective. Our vineyards are planted in ancient beach soils that stretch along Lake Ontario. Located in a glorious and storied setting amid a cluster of historic buildings, this farm has preserved a sense of intimacy with the land. We are hard-working romantics, and a trifle irreverent.

Directions
Prince Edward County is a peninsula jutting down into Lake Ontario, south of Belleville. Driving from the west (2 hours from Toronto): take Highway 401 to Wooler Road (exit #522), then head south on Loyalist Parkway (Highway 33). We’re just past the hamlet of Rosehall. Driving from the east (2.5 hours from Ottawa): take Highway 401 to Highway 49 south (exit # 566 for Picton), turn right onto Picton Main Street, which is also Highway 33, continue east on Highway 33, watch for the jog in the highway as you leave Bloomfield, and you’ll find us 5 km past Wellington.

Brighton White
A blend of pleasingly plump, unoaked Chardonnay, rounded out with silky peach Gewürztraminer and enlivened with a crisp Chenin Blanc. Grown on our Brighton Gravelly Sand. Expresses the varietals best if served “fraiche” rather than cold.

Cabernet Franc
Local grower Guy Plamondon sold us grapes from his vineyard near Consecon, enabling us to vinify our first county-grown Cabernet Franc. The care he took shepherding his grapes to first harvest is already evident after the first racking.

Chambourcin
A deep red, this hybrid has been blended with our neighbour’s Baco Noir, capable of enhancing heavier sauces and partnering with marbled beef. A lightly-oaked pleasing addition to a backyard barbecue and fine pepper steak alike.

Chardonnay
Our first oaked Chardonnay and first full Chardonnay release since 2002 features grapes from all three of our vineyards, which benefited greatly from the warm autumn.

Chenin
Our first full vintage of Chenin and the first made from Prince Edward County grapes. This King Eddie Vineyard offspring is remarkably clean and should provide a capable alternative to our dry Riesling.

Gamay
A lively and cheerful fruity wine. Chilled lightly, ideal for summer soirees and picnics. This grape varietal loves our soils, and is especially flavoursome when limited to premium yields.

Gamay
Energizing beaujolais-styled wine made from a strong harvest in our King Eddie vineyard, this Gamay shows great promise. We may blend some with the Cabernet Franc as a special treat. If so, it will need to experience some oak for a number of months before release.

Gamay/Pinot
The lively fruit of the Gamay is enhanced and refined by the 30 per cent Pinot influence. Lightly oaked, this is an easygoing red designed for everyday meals.

Gamay/Pinot Reserve
What a difference six months in a barrel makes: softened by oak, the Gamay is giving way to the more complex and sophisticated Pinot, creating a fine dining wine that will be enhanced even more by time in the bottle.

Gewürztraminer
A spicy, aromatic wine that’s all peaches and lychee. One of the few wines to enhance spicy Thai dishes. Only a few cases left.

Pinot Noir
The 2003 sold out in a few weeks, and the quality of grapes in 2004 was even better, so we believe this wine has the potential to be a remarkable vintage. It, too, will need substantial barrel time to maximize its good character.

Riesling
A nervy, Mosel-style Riesling that can kick-start a party or refresh on a hot summer’s day. Very dry. Grown from the original hand planting in 1999, this was a bountiful harvest during a good growing year. We’ve reduced the price to make room for the upcoming vintage.

Riesling
Exudes youthful energy in a fruitful bouquet, and carries the trademark clean citrus finish of our Riesling grown in Brighton Gravelly Sand. Very dry and refreshing. Like its predecessor, the wine is wonderful on its own at the cocktail hour or complements salmon and seafood in general.

Riesling
Our third commercial vintage of Riesling from our Applehouse vineyard looks to be of superior quality, already displaying well in the tank with a delicious aroma, and the trademark freshness and minerality of its Brighton Gravel predecessors.

ROSÉ
Another first for By Chadsey’s Cairns, this dry refreshing summer wine is made from Cabernet Franc grapes grown on our wine consultant’s vineyard in Niagara-on-the-Lake. It has a lovely hue and is clarifying well.
