Cold Springs Winery produces many varieties of internationally acclaimed wines, including Chardonnay, Riesling, Merlot, Syrah and Pinot Noir. Located in the Snake River canyon, which is part of the high mountain desert of Idaho, the wines enjoy strong spirited nuances influenced by the basalt lava flows that underlie the region. Vibrant flavors of currant and spice abound in the reds, and a crisp hint of sage creates a pleasant surprise in its whites. Each wine produced by Cold Springs Winery offers a unique addition to any table.

Directions
Cold Springs Winery is located along Interstate 84 approximately 60 miles east of downtown Boise and 65 miles west of Twin Falls. Directions From I-84 Eastbound: Take I-84 East to Exit 112, turn left onto Hammett Hill Road and take the first right onto West Ringert Lane.

Cabernet Sauvignon
Light, bright nose of plum and spice structure intensifies while standing in the glass. Color is on the light side due to the youngness of the vines. The 2005 and 2006 harvests are showing more of the inky black colors. A fun wine to drink!

Chardonnay
Traditional cold climate chardonnay, evolving from the sandy loam hills of Hammett, Idaho. Compact aromas of fruit, particularly banana, with a hint of toasty oak. Very smooth on the palate and enhanced when slightly chilled.

Johannisberg Riesling
Well-defined aromas of tropical fruit with flavors of peach, mango and citrus. Good structure with mineral and flinty notes emerging on the finish. A wine to go with turkey or to enjoy with a crab omelet and fruit salad for a Sunday brunch. "JR has been one of my passions for the last 25 years of wine making in Idaho. A versatile, incredible wine." says Jamie Martin, winemaker.

Merlot
Quite a medal winner here at Cold Springs Winery with its soft mouth feel. Full bodied spice with fresh raspberry and vanilla aroma. Hint of round sweetness on the finish. Serve with Idaho lamb shanks simmered all day in a vegetable, herb brown sauce. Oohh! Do I need to say more?

Pinot Noir
Pleases the palate with red and black cherry flavors giving a pleasant fresh-herb edge. A moderate-balanced wine that is a must with food.

Rose of Syrah
Produced from the winemaker's personal syrah vineyard in Hagerman, Idaho. This Rose is 100%
free-run Syrah juice. Flavors of raspberry and black cherry, with a fresh herbal note persisting through a dry, mineral-mouth feel. Especially appropriate when firing up the grill. This one is not your usual Rose!

Syrah
Full of ripe, fleshy wild berry, blackberry, and boysenberry flavors, this wine yields an enjoyable richly concentrated young wine.

Viognier
New varietal planted at the Cold Springs estate, showing some flavors of pineapple with a honey-like full mouth feel. Good acidity with an off-dry finish. Try a smoked trout salad or herb roasted chicken with this great Rhone-style wine.
