Eagle & Rose Estate Cabernet Sauvignon
This estate fruit is the first harvest of grapes after extensive vineyard renovations and the wonderful quality of the wine reflects those changes. The fruit fermented for twenty days, using two different yeasts to achieve the greatest color intensity and classic Cabernet characteristics. After malolactic fermentation, the wine was left sur lies for five months in French Oak barrels. The wine was than racked, aerated, and put back into barrels to rest for another 14 months before bottling. The result is a classic Cabernet with an Old World winemaking style. The wine is a deep garnet with a nose of deep, roasted fruits and cherries, rich oak and vanilla. The rich, viscous mouth has layers of blackberries that linger for an incredible time. This wine needs a chance to open up to reveal its depth so we suggest decanting, if possible. This would pair well with any red meat dish, game, braised meats, and rich cheeses.
  Eagle & Rose Estate Merlot
At the Eagle and Rose Estate, there are three vineyard blocks of Merlot. The fruit for this wine was chosen from the one particular block that produces grapes bursting with the scent of violets and rose petals. The fruit fermented for thirteen days on the skins, followed by a light press to retain the clarity and elegance of the wine. The wine was aged in one-year-old French barrels for 22 months. This wine is soft, round and mouth filling. There are distinct aromas and flavors of strawberries and raspberries with a beautiful balance. The lingering, elegant finish leaves your mouth full of the rich plums, tobacco, chocolate, and roses. As the wine remains open, the layers continue to open up, giving each taste another nuance. Enjoy this with grilled and braised dishes, pork, or pasta.
  Napa Valley Estate Sangiovese
This Sangiovese has lively aromas of black plums and dark cherries with accents of cinnamon and Valrohna chocolate. The wine has a lovely structure with medium tannins, and bright, natural acidity. The 2000 Sangiovese drinks superbly now, and will age wonderfully for years.
  Napa Valley Estate Sauvignon Blanc
The estate Sauvignon Blanc vines of 2003 farmed to produce this wine are now maturing, sending down deep taproots to bring wonderful flavors from the soils of the Pope Valley. This now produces a refreshing Sauvignon Blanc that bursts with perfumed, spicy aromas with layers of the tropics in the hints of pineapple, passion fruit, grapefruit, and coconut.
  Napa Valley Estate Syrah
The three vineyard blocks of Syrah were crushed together into one tank for fermentation. The fermentation lasted ten days, with no extended maceration. The wine was evenly split between new French oak barrels and one-year old French oak barrels. This is our first Syrah off the Estate! Exciting, yet subtle, with hints of blueberries and lots of spice. Bright fruit and oak flavors balanced evenly with vanilla and acidity. Long, smooth flavorful finish. Give this Syrah a little tome to open up, and it is a wonderful compliment to any meal. Drink upon release, or hold for more bottle age.
  Napa Valley Estate Viognier
The 2003 vintage was remarkable for the early harvest of the estate fruit. The unusually warm spring allowed the fruit to set and ripen ahead of the normal Napa Valley harvests. This produced delicate fruit that resulted in a crisp, medium to lean style of Viognier. While there are the layers of floral and peach undertones that one expects in a Viognier, this clean, bright version also contains the essence of lemon-drops and vanilla.
  Skyhawk Cabernet Sauvignon
The fruit for this great little wine sourced from six separate vineyard blocks at the Eagle and Rose estate. The Cabernet blended with 14% Merlot to make an affordable, fun wine that is true to varietal and easy to drink. There is a European influence to the winemaking style resulting in soft, round tannins. The first response to the wine is that it is “juicy” with great bursting flavors of Cabernet that include mint, tar and eucalyptus. The rich mouth and long finish make it hard to believe the price of this wine. This will become your “go to” wine for the incredible value this it is.
  Skyhawk Merlot
This classic Merlot is from 100% estate fruit. As these seven-year-old vines mature, we are seeing some great flavors develop in the vineyard that translate to incredible aromas in the wines. After harvest, the fruit was fermented in stainless steel and aged in French oak barrels. There are pronounced aromas of clove, peppermint, and lavender. The mouth is full of chocolate, deep cherry flavors, charcoal, and just the right amount of oak to balance the soft tannin structure. This wine is instantly likable and very drinkable. The lively fruit invites another glass. The great quality and value of this wine will make it your house Merlot.
