Johnson Estate Winery
|
|
Grapes have been grown on the Johnson Estate for well over a century, and the Johnson Winery, established in 1961, is now the oldest exclusively estate winery in New York State. All of the choice European and American winegrapes used to make our wines are grown within 3000 feet of the winery. This allows us to take full advantage of the chateau system of winegrowing and making. Every vintage is a "handcrafted" limited production, and the entire vinification process, including the crushing, pressing, fermentation, aging and bottling occurs on the estate under the Johnson Family's direct control. Thus, the superb quality of our wine is constantly supervised from the vineyard to the bottle, and, like the finest wines of Europe, Johnson Estate wines are "grown, vinified and bottled in the Chateau Tradition".

Red Ipocras
In 16th century England, Ipocras, both white and red, was a drink of the highest nobility. At a time when both sugar and spices were rare and precious, Ipocras was reserved for the use of royalty at the most precious ceremonial occasions. Indeed, Ipocras was the libation presented by the Lord mayor of London to Queen Elizabeth I at her coronation. Ipocras (the name derives from Hippocrates) is very sweet and is generously flavored with several of the spices popular in old England. These include ginger, cinnamon, and clove, and they leave a wonderfully warm and lingering aftertaste. Fortunately, we live in a time where the makings of Ipocras are not so dear, and it may now be partaken of by the lesser nobility as well as you and me. We at Johnson Estate were inspired to to produce ipocras to celebrate the commissioning of the Sea Lion, an authentic replica of a 16th century merchant ship which was built on Chautauqua Lake in Mayville, New York.

Seyval Blanc

In order to capture its freshness and flavor, we give the wine a slow, cool fermentation and then bottle it as soon after the vintage as possible. Our Seyval Blanc is made entirely in glass lined tanks as we feel that wood masks this wine's delicate character.
|
Snowy Vidal
Johnson Estate Vidal Blanc is a crisp, attractively fruity and moderately dry white table wine. In the past, Johnson Estate has used Vidal in blending; but with its distinct flavor and aroma, it is now used as a popular varietal. As the popularity of our Vidal grows, we will continue to add more Vidal grapes.
The Vidal Blanc winegrape (Vidal 256) is a French-American hybrid descended from the Ugni Blanc. It is one of the principal grapes grown in the Cognac Region of Southern France. The vines are modestly vigorous and very productive, producing large bunches of white to pink, medium sized grapes that ripen at harvest's end. It has proven to be well suited to our climate; and, produces excellent wines ranging from dry to sweet to very sweet "ice" wines.
