Texas Hills Vineyard

Texas Hills Vineyard has always championed the environmentally correct ways and protects our environment by growing the vineyard in a sustainable organic fashion. This means that we use the least amount of chemicals as the Texas Hill Country will allow. We use turkey compost to fertilize and remove weeds with a mechanical devise called a "French hoe". Sure we use a few fungicides, especially after the temperature reaches daytime highs over 90 degrees, stopping us from using sulfur and copper as our natural fungicides. Our winery and tasting room are as environmentally friendly as any building we could construct. In fact it is built from earth from our property, and is formally called "rammed earth". We dug down on our hillside location to hit solid rock on which we poured a concrete "stem wall", or footing, that was poured to a level of 18" above ground level. Forms were placed around the stem wall to the desired height (15' on the winery and 9' for the tasting room). The thickness of the wall is 24", that's right full two feet thick. The winery has no windows and only two doors so little heat, or cold, can enter without a lot of effort. The dirt has a little cement mixed with it and is wet just a little before being placed in the forms. Once the mix is in the forms the mixture is rammed, via pneumatic plunger, until solid. After the proper height was reached a 4" top plate is pour onto the wall to form a reinforced plate or "seal beam" that makes a platform on which to attach the rafters for the roof. Once the massive wall has "cured", or dried it is rock hard that slows the thermal transfer of heat, or cold, making the cave excellent for the production, and storage, for our Texas wines.
We then added a roof, with tin on steal beams, insulated to an 'R' value of over 40. The insulation is a special product made of cement and water sprayed, under pressure, forming small bubbles that dry instantly making a very environmentally friendly insulation that really works. The tasting room walls are only 18" thick, but as you come into our intimate surroundings we expect you will instantly note the quiet and friendly atmosphere created in our "cave above the ground". Even our floor is unique, with water being forced through pipes under the surface to help maintain a pleasant and even temperature. Our bar encourages you to stop and gather 'round to taste some Texas stars when it comes to wine.

Cabernet Sauvignon – (Newsom Vineyard)
Sometimes saying Cabernet Sauvignon just isn’t enough when it’s this good! Texas Hills Vineyard’s commitment to excellent Cabernet continues with this Kick Butt Cab, grapes from 22-year old vines from Newsom vineyard. When you swirl the glass and put your nose toward the wine you immediately “Get your guns up” with the taste of blackberry jam, then you “Gig’em” with the spiciness from the American oak. Then you are “Hook’em” with the rich and supple depth and long finish of the wine with its subtle tannins and rich color & body and “Sic’Em” to the check-out counter to take some home.

Cabernet Sauvignon – (Newsom Vineyard)
A genuine “Kick Butt Cab” (Kick Butt Cab – New)! Grapes from Newsom a 20-year old vineyard near Plains where they struggle, and the struggle is evident in the quality wine they produce. Taste a warm blackberry & strawberry jam and a spiciness from the American oak. Rich and supple with great color & body.

Cabernet Sauvignon (Arroyo Seco Vineyard)
Grapes from 5-year old vines from Arroyo Seco Vineyard, near Mason. Drew Tallent, a peanut farmer, decided to grow grapes and farming experience shows in the quality of grapes. The wine is “fruit forward” with the taste of blackberry, black cherry, and a hint of spice at the finish from the American oak.

Cinque Vino Rosso (Texas Hill Country)
Replaces Tre Paesano - Five Red Wines, an artistic blend of red wines including Cabernet Sauvignon, Merlot, Ruby Cabernet, Sangiovese, and Syrah. Taste berries (blackberry, raspberry, blueberry & loganberry) with a peppery finish. Notice the soft tannins and long finish!

Due Bianco (Estate)
A blend of Pinot Grigio (21%) and Chardonnay (79%), this crisp & fruity wine expresses pear & melon from the Pinot Grigio and , with a hint of pineapple given by the Chardonnay.

Merlot (Estate)
Smooth and rich with a great taste, the American oak provides a little spiciness then we “bottle aged” to a smooth perfection. A wine with enough balance to serve with your finest meal and enough elegance to stand alone in a glass to enjoy. Taste plum jam with a hint of spice.

ORANGE Moscato
One of the most amazing wines in Texas ! The Orange Muscat grape is a mutant of the Muscat Canelli grape that has a natural orange zest essence that presents itself in the wine. Pleasantly sweet, (only 4.7% R.S.); nicely balanced; with an alcohol level of 13% this wine has a smooth orange zest presentation with just a hint of peach and tropical fruit. Perfect with dark chocolate and/or citrus! Great finish to a fine meal!

Pinot Grigio (Estate)
Our estate Pinot Grigio that is vibrant and bold, holding its flavor throughout the taste; it is crisp & fruity, giving you a lot of melon and a bit of fresh pear with a hint of apricot & toasted almond.

PORT Bianco (Estate)
At 18.5% alcohol and 9.0% Residual Sugar, this satisfying White PORT is a “true port” fermented from 100% Muscat Canelli made into a wine, then 100% grape spirits added, to fortify., and placed into barrels for the “marriage” spending an additional year developing the rich flavors. Smell honeysuckle & hibiscus with the taste of pear, star anis, passion fruit & clover honey.

PORT Rubino (Estate)
Rubino is Italian for RUBY. Ruby ports are aged for just a short time (2 to 3 years in oak) and are bottled young & fiery. Ours is 18.5% alcohol and 8% R.S. (residual sugar), this satisfying PORT wine is a “true port” fermented from 100% Cabernet Sauvignon grown at Texas Hills Vineyard and made into a rich wine spending one year aging in American Oak barrels then we added 100% grape brandy to “marry” to the wine, and fortify, for an additional year - developing the rich flavors, body, and aromas we desired. We get the aroma of blackberry jam, typical of our Cabernet Sauvignon, and suggest you try this port after a nice dinner, pairing it with dark chocolate or Stilton cheese for the conclusion of a perfect meal. 1,000 cases produced.

Primitivo 2001 Akashic Vineyard
Grapes from Akashic Vineyard, often called “mother Zin” because it is the grape that the Italians brought with them when they came to the US and it became known here as Zinfandel. Taste blackberry, current and fig with a hint of oak.

Rosato di Sangiovese (Estate)
DRY rosé made from Sangiovese. Dry, yet fruity, a perfect wine with foods, like tomatoes & vinegar, huh, Texas foods (even hamburgers & barbecue). Taste strawberry & Cherry!

Rossore 2001 (Estate)
Slightly sweet and fresh to taste, this wine gives you the fresh taste of strawberry, with just a hint of cherry. Made with a blend of Chardonnay, Chenin Blanc, and Primitivo (for the blush). Much like White Zinfandel!

Sangiovese (Estate)
Sangiovese is the major grape in Chianti that we have grown to love. We call this wine a “super Texcan” because we have blended it with a little of our Cabernet to enhance the depth and character. Great with grilled foods, raspberry & blackberry dominates.

Syrah-Cabernet
Two unique fermentations of Syrah, one with equal parts Cabernet (from Texas Hills Vineyard), the other, 100% Syrah, from Fawn Ridge Vineyard (near Mason), we used a different yeast for each fermentation and blended the wines creating this fine product. This great wine has soft tannins with the taste of dark berries and spice with a black pepper finish.
