Founded in 2007, Settembre Cellars released our first wines on May 3rd, 2009. Located in Boulder, CO, we produce hand-crafted Colorado wines with meticulous attention to detail. Winemaking techniques that preserve the terroir of Colorado’s high altitude vineyards are used to produce exquisite wines of uncompromising quality. We strive to craft world-class wines from local grapes and use 100% Colorado grapes in our wines. With just 150 cases produced in 2007 we are truly a small, family-run winery.

Colorado Barrel Fermented Chardonnay
Our 2007 Barrel Fermented Chardonnay also comes from the Vinelands Vineyard. The fruit was fermented and aged in a small (57 liter) french oak barrel and then aged in stainless steel tank. The wine did not proceed thru malolactic fermentation. This winemaking technique lends a soft oak aroma to the wine while not overpowering the fruit. The wine is unfined and unfiltered.

Colorado Cabernet Sauvignon
Our 2007 Cabernet Sauvignon was vinted from the Mueller Vineyard, a small family vineyard on the mesa above Palisade in the Grand Valley AVA. The garnet colored red wine was fermented to dryness before aging in French Oak.

Colorado Chardonnay
Our 2008 Chardonnay comes from the Vinelands Vineyard. The fruit was dominantly fermented and aged in a small (57 liter) French Oak barrels and then aged in stainless steel tank. A small fraction was fermented without oak to add crispness to the final blend. The wine did not proceed thru malolactic fermentation. This winemaking technique lends a soft oak aroma and mouthfeel to the wine while not overpowering the fruit. The wine is unfined and unfiltered.

Colorado Riesling
Crisp and bright, made in the Alsatian style this wine has nice acidity and a clean palate. Serve as an aperitif or pair with creamy dishes such as soups and sauces.

Colorado Sangiovese
Grown on a mesa outside of Palisade, CO and within the Grand Valley AVA, our 2007 Sangiovese Rosato is a red wine lover’s pink wine. The wine is dry and offers a fascinating bouquet with aromas of strawberry and cherry.

Colorado Syrah
Aged in French Oak, our 2007 Syrah is a dry red wine with a hint of spice, a characteristic of Syrah grapes. The fruit was grown in Palisade, within Colorado’s Grand Valley AVA.
