Pepper Bridge Winery

Attention to detail and functionality were the driving forces behind the design and construction of Pepper Bridge Winery. The three-level facility is built into a hill, serenely surrounded by Pepper Bridge Vineyard. The winery itself is a winemaker’s dream. It is a state-of-the-art, gravity flow facility, complete with subterranean caves. In a gravity-flow winery such as this one, the grape pulp and juice are moved from the sorting table to the tanks to the barrels via gravity, rather than by pumps. This gentle treatment of the grapes prevents the shearing of seeds and the introduction of bitter tannins. As a result, all of our wines have elegant textures and exquisite flavor profiles.

Cabernet Sauvignon
Our 2001 Cabernet Sauvignon is a truly intriguing vintage that showcases the premium fruit grown in our estate vineyards. We have continued to push ourselves to better understand our vineyards and Mother Nature in order to produce a unique expression of the terroir. We believe the endeavor has been worthwhile, this 2001 vintage has a beautifully integrated, complex personality that is worth getting to know.

This rich, polished and multifaceted Cabernet Sauvignon entices you with layers of sweet black cherry, ripe plum, licorice, cedar, and spice flavors with a subtle touch of mineral. This highly concentrated wine offers an incredible blend of power and finesse with a long and persistent finish. We aged this wine for 22 months in 70% new French oak barrels.

Cabernet Sauvignon
Although the Walla Walla Valley’s 2003 growing season was one of the warmest and driest in the past decade, our estate-vineyard grapes thrived. During the long, warm days, the grapes savored the sun and ripened to ideal sugar levels. Cool nights locked in acid levels, creating well-balanced flavors. Our wines from this vintage are expressive and concentrated with silky tannins.

Merlot
Our 2002 Merlot is remarkably rich, plush, dense and concentrated. Intense black cherry, Italian plum, floral and dusky spice flavors mingle with touches of coffee, licorice, herb and earth scents. Full of flavor and body, this Merlot goes the distance with a long, elegant, persistent finish.

The wine shows intense flavours of ripe current, black cherry, and wild berry, floral and exotic spice with touches of chocolate, nutmeg, cinnamon and earth scents. Pepper Bridge Vineyard Reserve
Our goal with the vineyard reserve program is to showcase the character of each estate vineyard, and I believe we really accomplished that with our first release.
This dark, rich and immense wine is crafted around vibrant dark cherry flavors with currant and floral notes. Nuances of chocolate, nutmeg, cedar, sage and exotic spices add layers of complexity. This highly concentrated wine offers an incredible blend of power and finesse with a long and persistent finish. We aged this wine for 22 months in 70% new French Oak barrels.

This elegant, polished and multifaceted Cabernet Sauvignon has a wonderful purity of flavors, anchored by layers of black currant, dusty berries, earth, cedar, cigar box and spice flavors with a subtle touch of mineral. This wine shows off the unique characteristics of Seven Hills Vineyard with power, finesse and a long, persistent finish. We aged this wine for 18 months in 70% new French oak barrels.
