Cougar Crest Winery COUGAR CREST WINERY was established at the Walla Walla Airport in 2001 by Deborah and David Hansen. Owners of 50 acres of vineyard, all in the Walla Walla Appellation, we have sold wine grapes to other wineries for years. The move into making wine has been a natural progression for two people with strong backgrounds in science and a love of fine wine. The University of California at Davis offered many winemaking classes that both David and Deborah attended. Our first vintage was 900 cases and will be sold across the Northwest. The 2002 vintage will be 4000 cases and sales will expand into other states. The 2002 vintage also brought the release of our first white wine, Viognier. Natives of the Northwest, Deborah from Spokane and David from Bremerton, we met in Pullman. After graduating from Washington State University in the 1970's, Deborah in Pharmacy, and David in Veterinary Medicine, our careers led us to the San Francisco area for 18 years. It was there, among the California wineries, that the appreciation of the art of winemaking was born. While pursuing wine in California, we developed 125 acres of orchards in the Walla Walla Valley. In 1995 the farms became self-sufficient and we moved our family to the Valley in 1996. The return to the Northwest was a pleasant surprise. There were seven wineries making unbelievably good wine in Walla Walla. Upon visiting the vineyards, the decision was made to replace some aging apple orchards with wine grapes. The first year, we raised all our own plants with cuttings from Windrow Vineyard (the original Seven Hills vineyard) and Cailloux Vineyard. The chosen site was Stellar Vineyard, and the plants flourished. The next year Cougar Hills Vineyard was established. We currently make wine from Estate Grown Syrah, Cabernet Sauvignon, Merlot, Cabernet Franc, and Viognier. This year will mark the first year of production for Petit Verdot and Malbec, which will greatly expand our blending options and complexity in our Bordeaux varietals. Since moving back to the Northwest, our children have become teenagers and adults, the orchards have seen good times and bad, and our love of fine wine has grown into a passion for growing grapes and turning them into wine that everyone in the Valley can be proud of.

  2001 Walla Walla Valley Estate Grown and Produced Cabernet Franc
Chewy currants, jammy black fruit, smoky leather, violets and spice. Toasty oak, hearty tannins and a reverberating finish.
  2001 Walla Walla Valley Estate Grown and Produced Cabernet Sauvignon
80% Estate Grown Cabernet Sauvignon and 20% Estate Grown Merlot from Cougar Crest Vineyard and Stellar Vineyard. Presents lush, mature aromas of cassis, blackberry, lavender, and mocha to the nose and a dense, black ruby color to the eye. Powerful and silky impact on the palate gives blackberry jam, mocha and hints of lavender and mint. The mid-palate and luxurious finish wraps a spicy oak flavor around the rest for a lasting impression. The warm growing season gave us fruit with exceptional maturity of flavors, deep colors, and smooth tannins. Open top, small fermenters, hand punch downs and gentle basket pressing gave us wine full of fruit and aroma and no harsh bitter tannins. Aged in 100% new oak barrels from French, America, Russian and Hungarian forests for added complexity, it promises to be a wine that can be enjoyed when new and for many years in the future.
  2001 Walla Walla Valley Estate Grown and Produced Merlot
83% Estate Grown Merlot, and 13% Estate Grown Cabernet Franc, from Cougar Crest Vineyard and Stellar Vineyard. Aromas of blackcherry, strawberry, toast and violets, with a dense, dark color prepare the palate for a complex blend that includes black and red fruits, tobacco, and lavender. A versatile wine that will not overpower most foods, the mid-palate shows toast and a hint of vanilla that remains through a silky lingering finish.Harvested, fermented, and pressed using the same methods as our Syrah, these wines were barrel aged separately for 6-8 months. Individual barrels were selected for their blending characteristics, then racked into a tank, blended, and returned to barrels to allow the flavors to marry.
  2001 Walla Walla Valley Estate Grown and Produced Syrah
Estate Grown Syrah from Cougar Crest Vineyard and Stellar Vineyard. Following aromas of dark berries and spice, the palate is overwhelmed by the powerful, lush, and velvety blend of currants, plum jam, anise, and a hint of pepper. The mid-palate reveals the finesse of oak aging, and the finish is a long, lingering marriage of all these flavors. This year gave us a warm, even-temperatured growing season, and the fruit came in dark and concentrated. After destemming, the whole berry fermentation was done in small, open topped bins and punched down by hand three times per day to retain all the fruity, aromatic elements without extracting harsh tannins from the seeds. A hand operated basked press was used on all lots and the wine has been stored in a combination of new French, America, Russian and Hungarian oak barrels.
  2002 Walla Walla Valley Estate Grown Cabernet Franc
100% Cabernet Franc all from Cougar Hills Estate Vineyard in the heart of Walla Walla Valley of Washington State. Chewy currants and jammy berries, violets, herbs, pepper, and spice create a unique aroma that is so characteristic of Cabernet Franc. Leather, toast, and mature, fine-grained tannins enhance the smooth, balanced mouth feel and long finish. The 2002 growing season was typical for the Northwest. Long, warm days and cool nights gave us a fruit with exceptional maturity of flavors, deep colors, and smooth tannins. Hand harvesting, fermenting in small lots with open top fermenters, and punching down by hand yields wine that is full of fruit flavor, color, and velvety tannins. Barrel aging in a combination of American and European oak allows flavors to marry and adds complexity.
  2002 Walla Walla Valley Estate Grown Cabernet Sauvignon

Dense, dark ruby color and aromas of blackberry, currants, licorice, herbs, and mocha fill the senses. The palate reveals finely textured tannins, balanced acidity, and a mouth feel that is smooth and lush. The long, reverberating finish leaves lasting impressions of cassis, leather, and toast. 85% Merlot, 10% Cabernet Franc, and 5% Cabernet Sauvignon, all from Stellar Vineyard and Cougar Hills Vineyard. Our estate vineyards are the exclusive source for all of our wines. This wine opens with a ripe bouquet of bing cherry, red fruits, violets, anise, and a color that is dense, dark and ruby. Balanced acidity and mature tannins give the midplalate structure to support the lush, jammy mouth feel and the rich spectrum of fruit, spice and toasty oak that linger on the long, extended finish. The 2002 growing season was typical for the Northwest. Long, warm days and cool nights gave us very ripe fruit with good acidity and tannins. Hand harvesting, fermenting in small lots with open top fermenters, and punching down by hand yields wine that is full of color and velvety, not harsh, tannins. Barrel aging in a combination of French, American, and European oak allows flavors to marry and adds complexity.
  2002 Walla Walla Valley Estate Grown Syrah
97% Estate Grown Syrah and 3% Estate Grown Viognier from Cougar Hills Vineyard, Stellar Vineyard, and Golden?s Legacy. Our estate vineyards are the exclusive source for all of our wines. Aromas of ripe plum jam, blackberries, strawberries, and spice are followed by a smooth palate balancing luscious fruit, spice, acidity, and finely textured tannins. A long, languishing finish shows the finesse of oak aging. 2002 was a good year for grapes in the Northwest. Long, warm days, and cool nights yielded very ripe fruit with well-balanced acidity and mature tannins. Co-fermentation with 3% Viognier has subtly expanded the fruit flavor profile to include more red fruit character than previous vintages. Controlling our own vineyards allows us to vine ripen the fruit for full flavor development. Hand harvesting and small lot fermentation with hand punch downs yields wine with complexity, huge varietal character, and smoothness. Finished by aging in small oak barrels, this wine is enjoyable now and will age well.
  Syrah
Rich, plumy fruit, blueberries, earthly pepper and spice entice the nose while the palate shows balance of acidity and smoothly textured tannins. The aromatic finish continues these flavors along with a toast nuance of oak aging.
  Viognier
A pale straw color and nose of pear, citrus, melon, and honeysuckle followed by a lush palate with honey, spice and a hint of oak. The flavor and finish linger long after the wine is gone.
