Mystic Wines Mystic Wines is a small, family-run, Oregon winery located in the west hills of Salem, Oregon. Established in 1992, we are currrently producing and bottling five distinct wines: Merlot, Cabernet Sauvignon, Zinfandel, Syrah, and small amounts of RESERVE Merlot.

  1999 Cabernet Sauvignon
Oregon-Columbia Valley-McDuffee Vineyard. Here it is again, on your mark, get set…GO! Our best effort yet from this wonderful Mill Creek Valley site south of The Dalles. This fruit has that solid, intense Cabernet character - a little tobacco leaf, some briar and blackberry, and even a touch of dill thrown in for good measure. Maturation in lots of medium toast French oak has complimented the currant flavors and aroma. The formidable structure has been tamed by our requisite year of bottle age so that the flavors are crisp and pronounced without overwhelming your mouth in tannin. This wine definitely opens up with a little time in your glass. We love it paired with a thick, peppered T-bone steak on a bed of arugula topped with fresh shaved parmesan cheese (that's "Tagliata" in Italia). Only 100 cases were produced so be sure and stock up as this wine always sells out fast.
  1999 Merlot
Oregon-Columbia Valley-Hillside Vineyard. The benchmark and mainstay of Mystic has always been our Merlot and this year is no exception. Classic Red Bordeaux structure polished and redolent of years past. Wild blackberry and vanilla oak spice lend mature fruit flavors to the soft yet solid balance and lingering finish. By themselves, Hillside Vineyard Merlots don't intrude, yet you find yourself noticing the subtle pleasure of each sip and subsequent glass, a perfect compliment to roasts and venison as well as hearty winter stews. How about another bottle?
  1999 Reserve Merlo
Oregon-Columbia Valley-Hillside Vineyard. These few barrels were so good, structure and balance of fruit just right, that we bottled them separately as our very first RESERVE selection. A different barrel selection and fractions of press juice, this wine feels weightier (a new word?) and more viscous as well as slightly more dense in its blackberry fruit. When melded together with the toasted coffee accents of these particular barrels, this wine has become a standout! Add in a year of bottle age to round out the softness of tannins and voila!
  2001 Syrah
Oregon-Columbia Valley. Each year the fruit from this "Top Secret" little vineyard gets a little more robust. As the vines age the flavors are richer and deeper and the trademark black pepper spiciness becomes more pronounced. The wine is dark and inky again this year and is set off by nuances of plum and black licorice in both aroma and flavor, and enhanced by just a smidge more new toasty oak than last year. Careful not to overpower the lush natural fruit and spice of this Syrah, the oak rounds out the texture and captures that lingering pepperiness in the finish. The reviews so far suggest we have another crowd-pleaser on our hands.
  2001 Zinfandel
Oregon-Columbia Valley-Hillside Vineyard. Yes, Virginia, there is a Santa Claus and we think he'll find this one a keeper on those cold winter nights. More aromas of rich raspberry preserves than anything else delight your olfactory senses while the essence of the fruit is concentrated as it coats your tongue. Ample alcohol adds to the sweetness effect in the mouth without drying or a residual "heat" in the finish. This wine is great with just about anything (even PB&J) and holds it's own without overpowering many desserts - pairs especially well with chocolate. YUM!
