Cabernet Select Late Harvest
This wine originates from cabernet sauvignon and cabernet franc grapes grown along a slop of the Niagara Escarpment known as the Beamsville Bench. These berries were left to raisin on the vine during autumn, with a further concentratin of sugars and acids occurring when they were partially frozen by the first frosts of late fall. Selectively hand-harvested and pressed in a semi-frozen state, they deliver a sweet, rosé-tinged wine with luscious berry fruit and a delicate acidity.

Cabernet/Merlot
This blend of predominanty Cabernet Franc and Merlot originates from the limestone-rich clays of the Niagara Escarpment and the gravelly, shale-based loams along the banks of the Niagara River. Barrel aged in older oak for one year, our cuvé retains the mint-berry character typical of such varieties grown in these selected sites and soils.

This wine originates from the limestone-rich clay till soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, and made from our lowest yielding vines. Minimally filtered, it may throw sediment with bottle age. Decant if necessary.

Chardonnay
This wine originates predominately from vines grown in clay till soils along the benchlands of the Niagara Escarpment. These gently sloping terraces, overlooking Lake Ontario, are moderated year round by on-shore breezes. Vinified in stainless steel, our Chardonnay captures the freshness and vitality of this classic variety grown along these hillside.

Chardonnay CSV
Our estate is nestled on a sheltered terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Its limestone-rich soils, gentle slope and exposure to moderated lake breezes combine to create wines of great structure and elegance. Produced from CSV’s oldest, lowest-yielding vines, this wine give full expression to the terroir of our site.

Chardonnay Musquè
This wine originates from the limestone-rich soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Made from a rare clone of Chardonnay, it was vinified in stainless steel to preserve the spicy, muscat-like character which are hallmark of this grape.

Chardonnay Rerserve
This wine originates from the limestone-rich clay till soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Vinified in barrique from some of our oldest, lowest-yielding vines, it retains the clarity of fruit and minerality that Chardonnay from our estate is renowned for.

Dry Reisling
The noble Riesling grape is perfectly suited to the climate and soil of Niagara. This particular wine originates from mineral-rich clay soils found along the benchlands of the niagara Escarpment and southern shore of Lake Ontario. Dry in style, it exhibits the citrus fruit and mineral acidity unique to Riesling grown in these areas.

Dry Rose
This wine was vinified in the traditional saignée method primarily from Cabernet varietals. Once crushed, these grapes remain on their skins just long enough to produce a rosé coloured must. Fermented dry, the resulting wine offers refreshing berry fruit and lively acidity, making it ideal for casual fare any time of the year.

Gamay
Made from the classic grape of Beaujolais, this wine originates mainly from the limestone-rich clay till soils found on the benchlands of the Niagara Escarpment. Lighter in style, it offers notes of fresh berries and pepper along with a nicely rounded palate, the result of ageing a portion of the cuvée in small oak barrels.

Gamay Reserve
This wine originates from the limestone-rich clay till soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario. Low yields combined with extensive barrel ageing have produced a Gamay of exceptional depth and concentration. Minimally filtered, it may throw sediment with bottle age. Decant if necessary.

Semi-dry in style, it delivers pin-point balance of richness and acidity typical of Riesling from these areas.

This wine originates primarily from the limestone-rich soils of the benchlands of the Niagara Escarpment. These gently sloping terraces, overlooking Lake Ontario, are moderated year round by on-shore breezes. Traditional in style, our Pinot was aged in older oak in order to maintain the delicate character of this noble cool-climate variety.

Riesling CSV

Riesling Icewine
This wine originates from Riesling grapes grown along the slopes of the Niagara Escarpment and south shore of Lake Ontario. These clusters were left to partially raisin on the vine during late autumn, with a further concentration of sugars and acids occurring when the berries were frozen solid by the onset of winter. Selectively hand-harvested and pressed at temperatures below -10°C (14°F), these grapes produced a sweet nectar with impeccable acid balance.

Made from some of our oldesst, lowest-yielding vines, it is off dry in style with a distinctive mineral character that site and vine age alone can deliver.

Sauvignon Blanc
This wine originates primarily from the limestone-rich soils of the Beamsville Bench. Throughout the year, this terrace of the Niagara Escarpment is moderated by on-shore breezes from nearby Lake Ontario. Vinified in stainless steel, our Sauvignon exhibits the crisp fruit and racy acidity typical of this noble cool-climate grape.
