Gypsy Dancer Estates After extensively remodeling and improving the existing facility, Gypsy Dancer Estates Pinot Noir is crafted by gravity. Pinot Noir is the most sensitive wine. Its subtle nuances, complexity and structure must be protected by handling the grapes and wine very naturally and gently. Gravity, rather than using pumps, is how we achieve this at Gypsy Dancer Estates. The grapes are hand-harvested and sorted at the vineyard before arriving at the winery, where they are sorted again by hand. Using custom-designed, one-ton oak* and stainless steel** fermentation tanks, the whole grapes with a percentage of whole clusters added are cold-soaked for five to seven days, a pre-fermentation process wherein the tanks’ temperatures are brought down to about 40º F and the juice is urged to soak up color and phenolics (aroma) from the stems, seeds and skins. At the appropriate time, the temperature is raised and fermentation is allowed to begin via indigenous yeasts. Once the ideal alcohol level has been achieved, fermentation automatically stops and the free run wine is sent by gravity to bed in new French oak barrels positioned a level below the fermentation hall. There the wine ages gracefully for eleven to sixteen months, only woken once for racking and blending.

  PINOT GRIS CHRISTINE LORR
2004 Christine Lorraine Vineyard Pinot Gris displays the depth of fruit and texture derived from such close spacing in the vineyard. With bright aromas of pear, passion fruit, kiwi and clean-cut grass, the wine displays a round mouth full of crisp citrus and tropical fruits, a lovely silky texture and balanced acidity. It is a great white wine for red wine drinkers because of its complexity; Christine simply describes the wine as “Delicious!”This is the only white wine produced by Gypsy Dancer Estates
  PINOT NOIR A&G ESTATE VINEYARD
2003 A&G Estate Vineyard Pinot Noir expresses not only Gary’s style of winemaking, but the spicy black fruit character and minerality that is true to the Dundee Hills. Deep garnet in color, it is very substantial on the palate and exhibits a cardomom and cinnamon flavor derived from the use of whole clusters. Its flavors of blackberry, cherry, chocolate and earth meld into a long and persitant finish. The 2003 A&G Estate Vineyard Pinot Noir is an elegant and complex wine that will age nicely for seven to nine years.
  PINOT NOIR EMILY'S RESERV
The 2003 Emily’s Reserve shows forward fresh fruit and flowers on the nose, with a hint of spice. The mouthfeel is big and lush, with a velvety texture derived using oak cuves for fermentation. The wine is round and hits the mid-palate with dark fruit flavors of blackberries and blueberries, earth tones and cinnamon. This wine is perfect to drink now or can be enjoyed after cellaring for five to seven years.
  PINOT NOIR GARY & CHRISTI
The 2002 Gary & Christine’s Vineyard Pinot Noir is immediate on the palate. It is big, bright and expresses hints of blueberries and typical French forest floor notes of spice and earth. The finish has a lovely, lingering continuity of fruit and toasted vanillin oak. This exceptionally well balanced wine will age gracefully for the next 5-7 years.
